6 ounce chicken breast ((1 breast) skinless boneless, cut small pieces)
1/2 teaspoon chili powder (mild)
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1 tablespoon olive oil
2 links Italian sausage (cut in 1 inch pieces)
1 small onion (chopped)
1/2 bell pepper (chopped)
3 cloves garlic (minced)
28 ounce diced tomatoes ((1 can) juice included)
1 cup chicken broth (low sodium)
8 ounce penne (uncooked)
1 tablespoon hot sauce
2 green onions (chopped)
4 sprigs cilantro (chopped)

Steps:

  • Season the chicken with chili powder, salt and pepper.
  • Heat the olive oil in a large skillet. Add the chicken and sausage to the skillet and cook for 6 minutes just until the chicken and sausage start to brown.
  • Add the onion and bell pepper to the skillet and cook for 2 minutes until the onion is translucent. Stir in the garlic and cook for another minute until fragrant.
  • Add the diced tomatoes, chicken broth, penne and hot sauce to the skillet; stir well.
  • Cook for 15 minutes until the penne is al dente.
  • Garnish with green onions and cilantro

1 package (16 ounces) penne pasta
1 pound boneless skinless chicken breasts, cubed
3/4 pound smoked Polish sausage or fully cooked bratwurst links, cubed
1 medium onion, chopped
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
2 tablespoons olive oil
6 garlic cloves, minced
2 jars (16 ounces each) Parmesan Alfredo sauce
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 teaspoon pepper
1/4 teaspoon salt
2 cups shredded cheddar cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook the chicken, sausage, onion and red and green peppers in oil over medium heat for 6-8 minutes or until chicken is no longer pink. Add garlic; cook and stir 1 minute longer., Stir in the Alfredo sauce, soup, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in cheese. Drain pasta; add to chicken mixture and toss to coat., Serve desired amount immediately. Cool remaining mixture; transfer to freezer containers. 2 Tbsp, Extra virgin olive oil
2 Shallots, Diced
1 Pkg, Aidelles chicken sausage, Sliced in Rounds
½ Cup, White wine
½ Cup, Chicken broth
1 ½ Cup, Heavy Cream
½ Cup, Parmigiano Reggiano
Salt and pepper to taste
1 Tbsp, Chopped Parsley

Steps:

  • Add the pasta to a large pot of boiling water and cook according to the directions.
  • Meanwhile in a large skillet heat the olive oil and saute the chicken sausage for 4-5 minutes or until golden brown and cooked through. Add the shallots to the pan and cook for an additional 3 minutes until browned. Deglaze the pan with white wine and reduce until most of the wine is evaporated. Add the chicken broth, heavy cream and salt and pepper to the pan and bring to a simmer.
  • Drain and toss the pasta with the sauce and let the pasta cook within the sauce for a minute. Remove the skillet from the heat and fold in the cheese and parsley. Serve immediately.

8 ounces penne pasta
2 boneless skinless chicken breasts, sliced into thin strips
1 lb hot Italian sausage
2 teaspoons cajun seasoning
2 tablespoons butter
1 green bell pepper, chopped
1/2 red bell pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 1/2 cups heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
2 tablespoons grated parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Meanwhile, place chicken and 1/2 of the Cajun seasoning in a bowl, and toss to coat. Place sausage and the rest of the cajun seasoning in a seperate bowl and toss to coat. Fry sausage in a sepate frying pan until no longer pink. Slice and set aside.
  • In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add cooked sausage. 3 tablespoons extra virgin olive oil, divided
1 boneless skinless chicken breast, cubed
1/2 cup red wine
1 lb hot Italian sausage, casing removed, substitute sweet
2 cups onions, diced
1 red sweet bell pepper, chopped
1 (14 ounce) can diced tomatoes with juice
1 1/4 cups chicken stock
1 (8 ounce) tomato sauce
1 tablespoon garlic, minced
1 tablespoon fresh rosemary, substitute 1 t dried
8 -12 ounces penne pasta
1 1/2 cups parmesan cheese, grated
1/4 cup flat-leaf Italian parsley, chopped

Steps:

  • Boil large pot of water for pasta. Cook pasta according to package directions. This can be done later if you are making ahead of choose to simmer longer than suggested.
  • Heat the oil in a heavy skillet over medium, add chicken. Sauté until no longer pink. I let the edges get a bit browned w/o over cooking. Remove with a slotted spoon, drain and transfer to a bowl.
  • Add wine to skillet and boil reducing to 2T, scrapping up the browned bits.
  • Pour wine over chicken in the bowl, set aside.
  • Add oil to hot skillet, add sausage, onions and bell pepper to the skillet. Cook until sausage is no longer pink and onions & peppers are tender.
  • Breaking up sausage into bite size pieces while cooking. Add the chicken back into the pot.
  • Mix in tomatoes with juices, tomato sauce, chicken stock, garlic and rosemary. Simmer until reduced to saucy consistency, about 10 minutes. (as suggested by Bon Appetit). I allow it to simmer longer.
  • Add pasta to the finished chicken & sausage mixture and toss.
  • Add 1/2 - 1 cup cheese, toss to combine.
  • Top with parsley right before serving.
  • Serve with additional cheese at table.
  • NOTE: 4/17/11 It's been a while since I've made this. I re-ordered the ingredient list because I found it confusing as originally written.

2 sweet red peppers, chopped
1 large onion, chopped
