6 whole allspice
1 cinnamon stick
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
Pinch cayenne pepper
1 28-ounce can whole Italian-style tomatoes, drained, juices reserved, tomatoes chopped

2 tablespoons tomato paste
Pinch of sugar
12 ounces perciatelli pasta or spaghetti
Freshly grated kefalotyri cheese or Parmesan cheese

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain. Transfer pasta to platter. Top with chicken, sauce and cheese.

Tips:

  • Use ripe tomatoes: Choose tomatoes that are at their peak of ripeness for the best flavor. You can use fresh, canned, or diced tomatoes for this recipe.
  • Sauté the vegetables: Sautéing the vegetables in olive oil helps to enhance their flavor and create a rich, aromatic base for the sauce.
  • Use a variety of herbs: This recipe uses a combination of fresh basil, oregano, and thyme to add depth of flavor. You can also use other herbs like rosemary or marjoram.
  • Simmer the sauce: Simmering the sauce for at least 30 minutes allows the flavors to meld and develop. This will result in a more complex and delicious sauce.
  • Serve with your favorite pasta: This sauce is perfect for serving with any type of pasta, such as spaghetti, penne, or fettuccine. You can also serve it with rice or roasted vegetables.

Conclusion:

This chicken and tomato sauce robusto is a delicious and versatile dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a few simple ingredients, you can create a restaurant-quality meal that your family and friends will love.
