1 medium red onion, sliced

1 cup kc masterpiece origianal barbecue sauce
2 -3 chicken breasts
1 jalapeno (seeds optional)
1/4 of 1 onion
1 tablespoon of minced garlic

1 cup of shredded sharp cheddar cheese
1/2 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Slice chicken into strips and salt and pepper.
  • Dice onion and jalapeno- feel free to add more or less onion or jalapeno!
  • Rub pizza crust top and bottom with olive oil and pepper crust, put in oven for 7-8 minute
  • Cook chicken strips in pan until browned, add onion, jalapeno, and garlic in pan and 1/2 cup of KC Masterpiece Original BBQ sauce-stir together and turn off of heat.
  • After crust has precooked, use other 1/2 cup of BBQ sauce to coat the crust, top with chicken mixture and add all of the cheese.

2 pillsbury pie crusts (from refrigerated section of your grocer)
1 chicken breast, cut into small cubes
1 small onion, chopped
1/4 cup shredded cheddar cheese
1/4 cup mozzarella cheese
1/2 cup barbecue sauce, to taste (or more, your favorite kind)

Steps:

  • Preheat oven to 450°F according to pie crust instructions.
  • According to pie crust instructions, nuke each pie crust roll (by itself) in microwave on defrost or 30% power for 15-25 seconds OR let stand at room temperature for 15 minutes.
  • Spray round pizza pan with nonstick and unroll pie crust onto pan. Prick all over several times with a fork. Bake in center of oven for approximately 5 minutes or until pie crust is no longer moist and is starting get a light golden color. Do not overcook.
  • Meanwhile, chop small onion and cube (small cubes) one chicken breast (I use kitchen scissors to make chopping chicken quicker)and sauté together for about 5 minutes or until chicken is done and onions are starting to get clear.
  • Take pie crust out of oven, spread cheddar cheese on bottom pie crust, then spread chicken and onions on top of cheese, then spread mozzarella cheese on top of the chicken and onions.
  • Now, drizzle your favorite barbecue sauce back and forth over the entire pizza. Start with 1/2 cup and if it isn't mostly covered with that much, use more.
  • Unroll last pie crust, and place on top of the other pie crust and other ingredients. Press edges of top crust to bottom edge. It wont stick completely because you cooked the bottom crust a little already. Prick top crust with a fork. BROIL about 4 inches away from heat for about 5 minutes (keep checking because your oven may be different from mine) until crust starts to lose that moist look, then bake at 450°F in center of oven for another 4 minutes or until edges of crust start to get golden and top looks flaky and done.
  • Cut with pizza cutter and serve with a spatula. You eat this pizza with a fork.

1 tablespoon dark brown sugar
1 teaspoon granulated garlic
1 teaspoon granulated onion

1 teaspoon kosher salt
1/2 teaspoon chili powder
1/4 teaspoon freshly cracked black pepper
1 dried ancho chile
1 dried chipotle chile
1 dried New Mexico or California chile
1 tablespoon canola oil
1/2 cup diced white onion
2 cloves garlic, chopped
Kosher salt and freshly cracked black pepper
1/2 cup bourbon
1 1/2 cups ketchup
3 tablespoons apricot preserves
2 tablespoons dark brown sugar
2 tablespoons molasses
Flour, for dusting
1 ball store-bought pizza dough (about 10 ounces)
1/2 cup finely sliced red onion
5 ounces triple-creme cheese, sliced, such as Cowgirl Creamery's Mt. Tam
1/4 cup lightly packed fresh cilantro leaves

Steps:

  • For the chicken and rub: Butterfly the chicken breast halves. Combine the paprika, brown gsugar, granulated garlic, granulated onion, cumin, salt, chili powder and pepper in a resealable plastic bag and shake well to mix everything together. Add the chicken breasts and shake again to coat them evenly. Set aside in the fridge for at least 30 minutes to marinate while you prepare everything else.
  • Preheat a grill to high heat.
  • For the BBQ sauce: Take the dried chiles, tear them up, discard the stems and seeds and place in a small bowl. Pour boiling water over them and let sit for 5 to 10 minutes to re-hydrate. Drain and discard the water.
  • In a medium saucepan, add the canola oil, onions and garlic. Sweat over medium heat until the onions are very soft and fragrant, about 8 minutes. Season with salt and pepper. Add the chiles and bourbon and simmer for 1 minute to let some of the alcohol burn off. Add the ketchup, preserves, brown sugar and molasses and simmer for 10 minutes to let the flavors come together. Puree and set aside.
  • Remove the chicken from the marinade and cook on the hot grill, 5 to 7 minutes per side to get some color. Remove and allow to cool. Slice on the bias into pieces.
  • For the pizza. Dust a bench (or pizza peel if you have one) liberally with flour. Take the ball of pizza dough and press out into a disk, working it gently from the inside out. Continue to work and stretch the dough out until you have about a 12-inch circle. The crust should be nice and thin, about 1/8-inch thick. Set on a floured surface and press gently to flatten. Spread the BBQ sauce on the pizza in a very even, thin layer. Leave a border as desired around the edges. Top with the shaved red onion, slices of BBQ chicken and slices of cheese. Dot the top with extra patches of BBQ sauce. Slide the pizza into a hot pizza oven and bake until the crust is bubbly and charred around the edges, 12 to 14 minutes. (If baking at home, set a pizza stone in an oven at 500 degrees F to warm up for 1 hour).
  • When done, remove from the oven and scatter the top with fresh cilantro leaves.

1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. 20 fresh mushrooms, sliced (more if you desire)
1 small onion, sliced thin
