3/4 cup chopped celery
1/3 cup plus 1 tablespoon fat-free mayonnaise
1/3 cup plus 1 tablespoon fat-free plain yogurt

1 tablespoon lemon juice

2 cups shredded cooked chicken breast

6 slices whole grain bread, toasted

4 leaves Romaine or leaf lettuce
4 tiny dill or sweet gherkins

Steps:

  • In medium bowl, mix mayonnaise and mustard well. Stir in chicken and celery until well mixed.

6 slices bacon
4 boneless, skinless chicken breast halves, (6 to 8 ounces each)
coarse salt and ground pepper
3 plum tomatoes, quartered lengthwise, seeded, and cut into 1/2-inch pieces
1/2 small red onion, finely chopped
2 celery stalks, sliced crosswise 1/4 inch thick, plus 1/2 cup celery leaves (optional)
1/2 cup light mayonnaise
1 tablespoon white-wine vinegar
lettuce leaves, for serving

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil. Lay bacon in a single layer on prepared sheet; bake until it begins to render its fat, about 10 minutes. Turn bacon over, and slide to one side of sheet. Season chicken with salt and pepper, and place on baking sheet. Bake until bacon is browned and crisp and chicken is cooked through, 15 to 20 minutes.
  • Transfer bacon to a paper-towel-lined plate, and let drain; crumble. Let chicken cool completely. Meanwhile, in a large bowl, combine tomatoes, onion, celery, celery leaves (if using), mayonnaise, and vinegar.

1 whole chicken breast (1 1/2 pounds), on the bone
1 tablespoon olive oil
Coarse salt and freshly ground black pepper
1 1/2 cups mayonnaise, homemade or best-quality
3 tablespoon capers, rinsed
1/2 lemon, juiced
6 slices crusty white bread

Steps:

  • Heat oven to 450 degrees. Place chicken in a small roasting pan. Rub with olive oil, and season with salt and pepper. Bake until a meat thermometer inserted into the thickest part of the breast reads 180 degrees, about 25 minutes. Remove from oven, and cool slightly. Remove chicken from bones, and discard bones. Finely chop chicken (there should be about 2 cups).
  • In a medium bowl, combine chicken, mayonnaise, capers, and lemon juice. Stir to combine. Season with salt and pepper.
  • Toast four slices bread. Spread a thin layer of chicken salad over one slice untoasted bread. Top with a slice of toasted bread. Spread a second thin layer of chicken salad over toasted bread. Top with a slice of untoasted bread. Repeat with remaining bread and chicken salad.

1 lb pasta of choice
1 bag(s) tyson battered chicken breast strips
2 medium tomatoes
10 romaine lettuce leaves
1 lb thick cut bacon
1 c zesty italian dressing
1 c ranch dressing

  • 1. Boil pasta for 12 minutes so pasta is al dente. Rinse in cold water and set aside in large bowl.

6 slice lean bacon
3 lb boneless/skinless chicken breast
1 pt cherry tomatoes
4 green onions
2 c fresh basil leaves
1 c lite mayonnaise
4 tsp fresh lemon juice

  • 1. Toss the cubed Italian bread with a little olive oil, salt, garlic powder and fresh ground pepper. Spread onto baking sheet and bake 350 degrees for 10 - 15 min. til golden brown. Cool completely. Chop bacon into small pieces and cook til crisp. Drain grease and set bacon aside to cool. Poach chicken breasts in chicken broth, cool and cut into chunks (this can be done ahead) Cut cherry tomatoes in half (or quarters if large ones). Slice green onion small.   • 2. How to make basil mayonnaise dressing: in a food processor or blender add basil leaves, lemon juice, mayo, fresh garlic, salt pepper to taste. Blend til smooth. This can be made day ahead. Note: This recipe is also good with 1 or 2 ripe avocados added, cut into chunks.
