1/4 cup butter, cubed
1/2 pound sliced fresh mushrooms
1/4 cup finely chopped onion
1/4 cup all-purpose flour
2 cups 2% milk
2 teaspoons chicken bouillon granules
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
1/2 cup sour cream
3 tablespoons sherry or chicken broth
2 cups finely chopped cooked chicken
2 tablespoons minced fresh parsley, divided
15 prepared crepes (9 inches)
Additional sour cream, optional

Steps:

  • In a large skillet over medium-high heat, melt butter. Add mushrooms and onion; saute until tender. Sprinkle with flour; stir until blended. Gradually add milk. Stir in the bouillon, Italian seasoning and pepper., Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in sour cream and sherry. Remove 1 cup sauce; set aside. Stir chicken and 1 tablespoon parsley into remaining mixture; heat through., Spread 3 tablespoons filling down the center of each crepe; roll up. Drizzle reserved sauce over the top. Sprinkle with remaining parsley. Serve with additional sour cream if desired.

1 (2 ounce) package chipped beef
6 skinless, boneless chicken breast halves
1 pound sliced bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (16 ounce) container sour cream
½ teaspoon paprika

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.

Savory Crepes
1 tablespoon extra-virgin olive oil
2 cloves garlic, thinly sliced (1 tablespoon)
5 ounces baby spinach (5 cups, lightly packed)
Gruyere Bechamel
1 1/2 cups cooked chicken, shredded
1/2 cup Gruyere, shredded
Chopped fresh parsley, for serving

Steps:

  • Preheat oven to 400 degrees with rack in center. Heat oil in a large skillet over medium-high. Add garlic and cook until golden, 1 to 2 minutes. Add spinach and stir until wilted. Transfer to a work surface, chop, and set aside.
  • Mix 3/4 cup bechamel with chicken. Working with one at a time, place crepe on a work surface. Arrange 1/4 cup chicken mixture and 1 heaping tablespoon spinach down center of crepe; roll into a cylinder. Transfer, seam-side down, to a 9-by-13-inch baking dish; assemble and arrange more crepes, leaving 1/2 inch in between each. Spoon more bechamel on top and sprinkle with cheese. Bake until bubbly, about 15 minutes. Switch oven to broiler setting and cook until browning in spots, about 5 minutes. Remove from oven and let cool slightly. Sprinkle with parsley.

It is most important that you use FROZEN chicken and not fresh otherwise the dish will not work. This a nice recipe because it is super fast to prepare and then just walk away from until it is done cooking.

1 (2 lb) bag frozen boneless skinless chicken (tenders or breast)
1 -16 ounce sour cream
2 (10 ounce) cans cream of mushroom soup (or 1 family size cream of mushroom soup)
1 (4 ounce) jar dried beef
1 (16 ounce) package bacon (any type you like)
1 teaspoon garlic salt (optional)
1 teaspoon ground pepper (optional)
1 (16 ounce) package egg noodles

Steps:

  • -Preheat oven to 375.
  • -Mix the Sour Cream with the 2 cans of Cream of mushroom Soup. (add garlic salt and pepper to taste if you like more flavor (I highly recommend it).
  • -Line a 13 x 9 glass baking dish with the dried beef. (edges slightly overlapping so that the whole bottom is covered).
  • -Place FROZEN chicken on top of the dried beef in baking dish (chicken should not be sitting on top of eachother, just one layer).
  • -Pour Sour Cream and Cream of Mushroom mixture over FROZEN chicken so that it covers.
  • -Place Four (4) strips of bacon over the top width wise.
  • -Put baking dish in 325 degree oven for 2 hours.
  • -After cooked place on a bed of cooked Egg Noodles and enjoy.

2 tablespoons vegetable oil
2 tablespoons bourbon whiskey
1 tablespoon parsley

1 1/2 cups Kellogg's® corn flake crumbs or 6 cups Kellogg's® corn flakes (crushed to 1 1/2 cups)
1 teaspoon salt
1 teaspoon garlic salt
1 egg
3/4 cup all-purpose flour
3 tablespoons margarine or butter, melted

Steps:

  • 1. Place chicken in single layer in shallow dish. In small mixing bowl, stir together water, oil, whiskey, parsley, ginger and lemon juice. Pour over chicken. Cover and chill at least 2 hours, turning pieces several times. Drain chicken, reserving marinade.2. Measure KELLOGG'S Corn Flake Crumbs into shallow dish or pan. Stir in salt and garlic salt. This is a recipe that was given to me a couple of years ago. My hubby really loves it especially when I use rotisserie chicken as part of the filling versus just chicken breast. These crepes cook very quickly so don't wander too far from the stove while cooking. They also freeze very well!

1 ⅓ cups milk
1 cup all-purpose flour
4 large eggs
2 tablespoons oil
¼ teaspoon salt
2 (10.5 ounce) cans condensed cream of chicken soup
3 ½ cups shredded roasted chicken
1 cup shredded Cheddar cheese
⅔ cup milk
1 (4 ounce) can sliced mushrooms, drained
⅓ cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Whisk milk, flour, eggs, 2 tablespoons oil, and salt together in a bowl until well combined.
  • Heat a nonstick 10-inch skillet or crepe pan over medium-high heat until hot. Pour about 1/4 to 1/3 cup batter into the hot pan and immediately tilt the pan so the batter covers the bottom. 1 egg, beaten
1 cup milk
1 tablespoon butter, melted
6 tablespoons butter
6 tablespoons all-purpose flour
3 cups milk
1/2 cup shredded sharp American cheese
1/4 cup dry white wine
3 ounces sliced mushrooms, drained
2 cups chopped cooked chicken
10 ounces frozen broccoli, cooked and drained

Steps:

  • Crepes: In mixing bowl, combine egg, milk and butter. Add the flour; beat till smooth. Lightly grease a 6-inch skillet or crepe pan and heat. Pour 2 T. batter into skillet; lift pan and tilt from side to side til batter covers bottom. Brown crepe on one side only. Repeat for 12 crepes. Set aside.
  • Sauce: Melt the 6 T. butter and blend in flour and a dash of salt. Add the 3 cps milk all at once. Cook, stirring constantly, til mixture thickens and bubbles. Stir in cheese and wine til cheese melts. Stir in mushrooms.
  • Filling: Combine chicken, broccoli and 1/2 cup sauce. Spoon 1/4 cup filling on unbrowned side of each crepe. Roll up jellyroll style. Arrange, seam side down, in a chafing dish or crepe pan. Drizzle remaining sauce over crepes. Cook, covered over low heat til bubbly. Serves 6.
  • I have also warmed this in the oven. Heat oven to 350. Place crepes in oven safe pan. Heat for 20 minutes or until bubbly.
