2 tablespoons minced fresh flat-leaf parsley
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • Add the chicken and 2 1/2 cups of the Monterey Jack cheese to a large bowl and toss together. Set aside.

Tips:

  • Choose the right tortillas: Use fresh, pliable tortillas that are not too thick or too thin. Corn tortillas are a classic choice, but you can also use flour tortillas.
  • Don't overfill the tortillas: Overfilling the tortillas will make them difficult to roll and seal. Aim for a thin layer of filling, about 1/4 cup per tortilla.
  • Use a variety of fillings: Don't be afraid to experiment with different fillings. Some popular options include shredded chicken, beef, or pork, black beans, corn, cheese, and salsa. Try to create a filling that is balanced in terms of flavors and textures.
  • Roll the tortillas tightly: Once you have filled the tortillas, roll them up tightly. This will help to keep the filling in place and prevent the pinwheels from falling apart.
  • Bake or fry the pinwheels: You can either bake or fry the pinwheels, depending on your preference. If you are baking them, preheat the oven to 375 degrees Fahrenheit and bake the pinwheels for 15-20 minutes, or until they are golden brown. If you are frying them, heat a large skillet over medium heat and fry the pinwheels in a little bit of oil until they are golden brown and crispy.

Conclusion:

Chicken Enchilada Pinwheels are a delicious and versatile dish that can be served as an appetizer, main course, or snack. They are easy to make and can be customized to your liking. With a little bit of creativity, you can create a dish that is sure to please everyone at your table. So next time you are looking for a quick and easy meal, give Chicken Enchilada Pinwheels a try!
