CHICKEN FRIED STEAK W/CREAM GRAVY

Chicken Fried Steak W/Cream Gravy image

This is a recipe for Chicken Fried Steak, one of the staple foods of Texas. Like with fried chicken, folks in each family or restaurant tend to have their own little "secrets" to preparing Chicken Fried Steak, so you can play with the recipe a bit. But if it don't include the cream gravy, it ain't been prepared right and it ain't a "secret" worth keeping.

CHICKEN FRIED BACON W/CREAM GRAVY

Chicken Fried Bacon W/Cream Gravy image

Bacon - it's the icecream of the meat world, high in Vitamin-G (grease) and bound to make the food police crazy! This side of fat douple-dipped in fat then fried in fat & served with a side of fat (cream gravy) recipe comes from Sodolak's Original Country Inn restaurant in Snook, Texas. Cream gravy is my own recipe. I do not admit to ever making fried bacon so prep time is a guesstimate ;)

SOUTHERN FRIED CHICKEN W/CREAM GRAVY

Southern Fried Chicken W/Cream Gravy image

This chicken is crispy and the best I've eaten! It is important to follow the instructions on when to cover or uncover chicken during frying. That's what makes it crispy. To me, this is the ultimate comfort food with the delicious cream gravy. Prep and cook times are approximate.

Time 55m

Yield 4 serving(s)

Number Of Ingredients 11

1 chicken, cut up into separate pieces (about 3 lbs.)
1 cup all-purpose flour
2 teaspoons salt
3/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1/2 cup light cream or 1/2 cup half-and-half
vegetable oil
2 tablespoons reserved fat, from skillet
2 tablespoons flour
1 cup light cream
salt and pepper

Steps:

  • Wash and dry chicken pieces; shake in a bag with flour, salt, pepper and poultry seasoning.
  • Dip coated pieces in cream in pie plate; then dip in remaining flour mixture again to coat evenly.
  • Pour enough oil into a large skillet to make a depth of 1".
  • Heat over moderate heat to 375 degrees on deep-fat frying thermometer (if you have one).
  • If not, just test heat by sprinkling a drop of water into grease, if it pops, it's ready enough.
  • (Stand back, so you don't get splattered).
  • Add chicken, skin side down.
  • When underside of chicken starts to brown, lower heat and partially cover skillet with lid.
  • Turn chicken pieces after 15 minutes.
  • Continue cooking second side, uncovered, until browned and chicken is tender, 10 minutes longer.
  • Drain on paper toweling, keep warm.
  • Serve with Cream Gravy, if you wish.
  • For Cream Gravy: Pour off fat from skillet, leaving brown bits; return 2 tablespoons fat to pan.
  • Stir in 2 tablespoons flour; heat until light brown.
  • Remove from heat; gradually stir in 1 cup light cream.
  • Return to heat; cook, stirring constantly, until thickened and bubbly.
  • If too thick, add more cream.
  • Taste; add salt and pepper as needed.
  • Makes about 1-1/4 cups.

HAMBURGER CREAM GRAVY

I found this in our local paper a few weeks ago and found it to be a delicious, quick and easy meal for after work....or, for breakfast.

Provided by Hey Jude

Categories     Breakfast

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

1 tablespoon bacon drippings or 1 tablespoon oil
1/2 lb ground beef
3 tablespoons minced onions
1 1/2 tablespoons flour
1 cup milk
salt and pepper
mashed potatoes or toast

Steps:

  • Heat bacon drippings or oil in a large skillet over medium-hi heat; add ground beef and onion and cook and stir, breaking meat into small crumbs, until meat and onions have browned, about 7 minutes.
  • Push meat to side of pan and drain off all but 1 1/2 tablespoons pan drippings; return to low heat and whisk flour into pan drippings until smooth.
  • Slowly add milk and stir until smooth.
  • Move meat back into center of pan and stir to coat with gravy; cook until thickened, season with salt and pepper to taste and serve over split baking powder biscuits, toast or corn bread or over mashed potatoes.

Tips:

  • Choose high-quality bacon: Look for brands that use pork belly instead of pork shoulder, as these tend to provide a meatier and more flavorful bacon.
  • Cook the bacon slowly and evenly: Overcooking the bacon will make it tough and chewy, so take your time and cook it over medium heat until it's golden brown and crispy.
  • Use a good quality flour for the gravy: All-purpose flour is a good option, but if you want a thicker, more flavorful gravy, try using a higher-protein flour like bread flour or semolina flour.
  • Don't be afraid to experiment: This recipe is a great starting point, but feel free to add your own favorite seasonings or ingredients to the gravy. Some popular options include garlic, onion, celery, and bell pepper.

Conclusion:

Chicken fried bacon with cream gravy is a delicious and comforting dish that can be served as a main course or as a side. The bacon is crispy and flavorful, while the gravy is rich and creamy. Whether you're serving it for breakfast, lunch, or dinner, this dish is sure to be a hit.
