Steps:

  • Combine basil leaves, 2 1/2 tablespoons olive oil, walnuts, Parmesan cheese, and garlic in a food processor; process until pesto is smooth.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken until golden brown, about 5 minutes per side. Transfer to serving platter.
  • Cook and stir mushrooms in a single layer in the same skillet until tender, about 5 minutes. Add onion; cook until translucent, about 5 minutes. 1/2 cup canned low-salt chicken broth

Steps:

2 tablespoons minced fresh parsley
2 tablespoons minced shallot
1 clove garlic, minced
4 thick slices of applewood smoked bacon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray an 8x8-inch baking dish with cooking spray.
  • Using a sharp knife, cut a slit into the thick side of each chicken breast about 2 inches long and 1 1/2 inches deep.
  • Mash together the Gorgonzola cheese, parsley, shallot, and garlic in a small bowl; season with salt and black pepper. Divide the filling in half, and stuff each chicken breast with cheese filling. Wrap 2 slices of bacon around each breast, and secure with wooden toothpicks. This is an exact copycat recipe of the totally easy and delicious Chicken Gorgonzola Salad available in the Fred Meyer Deli case (recipe deciphered by Bitchin' Vittles.) It's a light, flavorful summer salad that is sure to be a huge hit at your next potluck, BBQ or family get together!

1 lb penne pasta
2 boneless skinless chicken breasts
1/2 teaspoon lemon pepper seasoning (to taste)
2 cups red grapes (seedless, sliced in half)
4 green onions (thinly sliced)
1/3 cup pecans (coarsely chopped)
1/2 cup gorgonzola (crumbled)
1 cup mayonnaise (for best results, use a quality brand like Best Foods)
2 tablespoons extra virgin olive oil
2 tablespoons seasoned rice vinegar (you may use apple cider vinegar, but rice vinegar is better here)
3 tablespoons white sugar (to taste)
1/2 teaspoon kosher salt (regular table salt will be TOO SALTY)
1/4 teaspoon black pepper (to taste)

Steps:

  • Cook the pasta according to the package directions, NOT al dente. You don't want it to be too gummy or too mushy. Drain in a colander and run COLD water over until it's completely cold. Transfer to a large bowl.
  • Sprinkle the chicken breasts with lemon pepper. "Grill" the chicken breasts by whatever method you prefer. You may use a panini type grill, a barbecue grill, or simply bake in the oven. Your cooking times will vary based on your method, but just make sure the breasts are fully cooked by reaching an internal temperature of 165 degrees, or when the juices run clear. Allow the chicken pieces to cool until you can handle them. Slice the chicken thinly, then cut slices in half so they are bite-sized. Spread out to cool completely while you prepare the remaining ingredients.
  • Pour the dressing ingredients (mayo, oil, vinegar, sugar, salt, pepper) into the bowl and whisk until incorporated.
  • After the chicken and pasta are completely cooled, add all the remaining ingredients to the bowl and stir gently. Refrigerate until ready to serve.
  • TIPS: If the salad is too stiff after prolonged refrigeration, you can make it creamy again by stirring in a tiny bit of olive oil, milk or warm water. Gorgonzola cheese is similar to bleu cheese, but slightly milder. It is an acquired taste for some people, so feel free to use more or less to taste. I use MORE! For best results, don't substitute or omit ingredients. I usually try doing things to lower fat or calories, but in this case, the results will NOT be the same.

4 chicken breast halves with skin and bones (about 2 1/2 pounds total)
1/4 pound chilled Gorgonzola dolce, sliced
1 tablespoon vegetable oil
1/3 cup water
2 1/2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 425°F with rack in middle.
  • Pat chicken dry, then cut a deep 3-inch-long pocket horizontally in long curved side of each chicken breast half. Fill each pocket with one quarter of cheese. Season chicken all over with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Heat oil in an ovenproof 12-inch heavy skillet over medium-high heat until it shimmers. Place chicken, skin side down, in skillet and cook, undisturbed, until golden brown, about 4 minutes. Turn breasts over, then place skillet in oven and bake until just cooked through, 20 to 25 minutes. Transfer chicken to a platter.

1 teaspoon garlic powder
2 large egg whites
1 cup chopped hazelnuts, available on baking aisle

2 tablespoons extra-virgin olive oil
1 cup whole milk
1/2 cup Gorgonzola
2 tablespoons chopped fresh sage leaves, plus extra for garnish, substitute 1 teaspoon dried sage and stir into sauce, if fresh is not available

Steps:

  • Preheat oven to 325 degrees F.
  • Mix flour, poultry seasoning and garlic powder in a dish. Beat egg whites in a shallow plate or bowl. Place hazelnuts on a piece of waxed paper or plastic wrap on a cutting board or work surface.
  • Preheat a nonstick skillet with oven safe handle over medium high heat. Season the chicken with salt and pepper. Turn in flour to dust the breasts, then turn in egg whites, then press breasts into nuts on both sides. Wash hands. Add extra-virgin olive oil to the pan and add chicken. Brown the nuts and chicken 2 minutes on each side then transfer to the oven and finish cooking the chicken through, about 8 minutes.
  • In a small pot, warm milk over medium heat. Add cheese and melt it into the milk. Stir in 2 tablespoons of chopped sage and simmer 5 minutes.

1 tablespoons garlic, minced

2 ounces yellow onion, minced
4 ounces chanterelle mushrooms

1/2 tablespoon oregano, chopped
Kosher salt, to taste

2 (12-ounce) Airline chicken breasts, split into 4, skin on

8 ounces chanterelle mushroom-gorgonzola mix
2 ounces canola oil

Steps:

  • For the chanterelle mushroom-gorgonzola stuffing: In a medium hot saute pan add the bacon fat and saute garlic, shallot and onions until translucent.
  • Add chanterelle mushrooms and continue sauteing until tender. Deglaze with white wine.
  • Chill and set aside.
  • In a medium mixing bowl add cool chanterelle mushroom mix, gorgonzola, basil, oregano, salt and black pepper. Fold together until incorporated. Chill and set aside for later use.
  • For the pan roasted chicken breast: Preheat the oven to 350 degrees.
  • With a boning knife, butterfly 4 chicken breasts. Stuff each breast with 2 ounces of chanterelle mushroom-gorgonzola mix then tie with butcher's twine to ensure that it stays together.
  • Season each chicken breast with salt and cracked black pepper.
  • In a large hot saute pan add canola oil then lay the chicken in the pan skin side down. Sear for about one minute then turn over and continue cooking for 30 more seconds.
  • Place the entire pan in a 350-degree oven and roast until done. Serve with onion jus immediately.

2 tablespoons chopped fresh parsley leaves

Steps:

  • To a large pot of boiling salted water, add gnocchi and cook for 3 to 4 minutes or until they float to the surface. Drain and return to pot; cover to keep warm.

2 cups fresh baby spinach leaves, lightly packed

Steps:

  • Cook and drain pasta as directed on package.
  • In a large bowl, mix cooked pasta, chicken, bacon, tomatoes and spinach.
  • Pour dressing over pasta mixture, toss until coated.
  • Fold in cheese.
  • Cover and refrigerate until serving.

This is a rich pasta sauce that is flavored with Gorgonzola cheese, mushrooms, grilled chicken, and fresh chopped tomatoes.

2 chicken breasts
2 tablespoons vegetable oil
1 lb dry pasta
2 cups half-and-half
4 ounces crumbly gorgonzola
8 ounces white button mushrooms, sliced
2 tablespoons shredded parmesan cheese
1/2 cup chopped tomatoes

Steps:

  • Pound chicken breasts until they are 1/2 inch thick season with salt and pepper. Sear chicken in a hot skillet with two tablespoons of oil over medium high heat. Cook on each side for about 4 to 5 minutes or until completely cooked. Remove chicken breasts from heat, and let rest for several minutes before slicing. You may need to add an additional tablespoon of butter or two to the sauce pan to saute the mushrooms. Saute the mushrooms on medium high heat until they are browned. While mushrooms are browning sprinkle with about 1/2 teaspoon of salt.
  • Cook pasta according to instructions on the package. Johnny Carino's typically uses penne pasta, but I like to use a fettuccine pasta because I think it holds the sauce better. Prepare sauce by combining half and half and Gorgonzola in a saucepan heating through. The sauce should thicken slightly. Slice chicken into 1/4 inch slices. Add sauteed mushrooms to the sauce, and stir to combine well. Plate pasta by adding 1/4 of the pasta, 1/4 of the chicken slices. Drizzle with sauce, and top with chopped tomatoes and shredded Parmesan.
  • If you need to reheat this dish, I recommend leaving all of this unassembled and reassemble just before serving again. If you do not combine the pasta sauce and pasta together while this is refrigerated the sauce won't soak into the pasta.

1/4 cup white wine

2 cups (8 ounces) crumbled Gorgonzola cheese
6 to 8 fresh sage leaves, thinly sliced

  • Cook pasta according to package directions. Meanwhile, in a large skillet over medium heat, brown chicken in oil on all sides. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Add cream and broth; cook until sauce is slightly thickened and chicken is no longer pink. Stir in the Gorgonzola cheese, sage, salt and pepper; cook just until cheese is melted. Drain pasta; toss with sauce. Sprinkle with Parmigiano-Reggiano cheese and parsley.

1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1 cup olive oil
3 cups thinly sliced red cabbage
2 1/2 cups shredded cooked chicken
1 small fennel bulb, thinly sliced
1 head radicchio, thinly sliced
1 small red onion, thinly sliced
1 cup coarsely chopped toasted walnuts
1 small carrot, peeled, cut into matchstick-size pieces
1 pear, peeled, cored, cut into 16 slices
1 cup crumbled Gorgonzola cheese (about 4 ounces)

Steps:

  • Finely chop garlic cloves in processor. Add 1/4 cup balsamic vinegar and 1 tablespoon Dijon mustard and blend until smooth. With machine running, gradually add olive oil and process until well blended. Season dressing to taste with salt and pepper; set aside.
  • Combine cabbage, chicken, fennel, radicchio, onion, walnuts, carrot and pear slices in large bowl. Pour enough dressing over salad to coat. Toss well. Working in batches, sauté salad mixture in large skillet over medium heat until salad is warm and cabbage is slightly wilted, about 5 minutes. Divide salad among 4 plates. Sprinkle 1/4 cup cheese over each salad and serve.

1 skinless, boneless chicken breast half
1 tablespoon dried Italian seasoning
1 onion, diced
2 cloves garlic, minced

1 (12 inch) pre-baked pizza crust
1 (14 ounce) jar pizza sauce
1 tomato, sliced
4 ounces crumbled Gorgonzola cheese
4 ounces shredded mozzarella cheese

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a large skillet over medium-high heat, stir in the chicken breast, and cook for a few minutes until the pieces begin to plump. Stir in the Italian seasoning, onion, garlic, and mushrooms; cook and stir until the mushrooms have softened and the onion has turned translucent, 5 to 10 minutes. Although I usually post healthy recipes, this one does not fall into that category! It is rich, creamy and decadent. If you like cream sauces, watch out!! This is a recipe my husband developed based on a dish at an Italian restaurant. I think his is just as good.

4 boneless skinless chicken breasts (preferably Italian-marinated)
1 lb penne pasta
1/2-1 cup butter
1 pint heavy cream
4 ounces gorgonzola, crumbled
1/4 cup shredded parmesan cheese
1 teaspoon nutmeg
2 roma tomatoes, chopped

Steps:

  • Grill or broil chicken breasts; slice into thin strips.
  • Cook pasta according to package directions.
  • Toss with olive oil, return to pot.
  • While pasta and chicken are cooking, melt butter in medium saucepan, heat to boiling, stirring constantly, boil 1 minute.
  • Slowly add heavy cream, heat to a boil to reduce, stirring constantly.
  • Boil for 2 minutes.
  • Reduce heat, add Gorgonzola, parmesan and nutmeg.
  • Stir until melted.
  • Serve sauce over noodles, top with chicken and chopped tomatoes.

BOW TIE PASTA WITH CHICKEN & GORGONZOLA SAUCE

2 chicken breast halves, cooked and cubed ( i use store bought rotisserie chicken)
8 oz bow-tie pasta, uncooked
1/2 lb fresh asparagus
3 green onions
1/4 c fresh parsley
1 clove garlic, minced
4 oz gorgonzola cheese, crumbled (1 tub)
4 oz monterey jack cheese or colby/ jack
1/3 c parmesan cheese, shredded or shavings for garnish
1/2 c heavy cream
2 Tbsp olive oil
1/2 tsp cracked black pepper

Steps:

  • 1. Clean and snap asparagus where tender, then cut into 1" diagonal pieces. Clean and slice green onions. Mince garlic and chop 1/4 cup of parsley. Reserve a few springs of parsley for garnish.
  • 2. Cook pasta as directed. Add sliced asparagus into boiling pasta the last 5 minutes of pasta cooking time.
  • 3. Meanwhile, in a large skillet; heat olive oil. Cook onions, garlic and parsley on med-high heat for about 5 minutes or until onions are tender. Add chicken and stir. Add heavy cream and bring to a slow boil. Add jack cheese and gorgonzola cheese. Stir while melting cheese. Reduce heat to medium-low heat, simmer for 3-5 minutes.
  • 4. Drain pasta and asparagus. Pour into gorgonzola cheese sauce, half of the pasta at a time. After first half, add as much of the remaining pasta to the sauce to accommodate your liking.
  • 5. Add cracked pepper and parmesan shavings and a spring of parsley for garnish. Serve with a side salad and crusty garlic bread. Pairs well with a Chardonnay or Pinot Noir. Enjoy!
