15-MINUTE CHICKEN, RICE AND GRAPE SALAD

15-Minute Chicken, Rice and Grape Salad image

Brown rice makes a nutty, chewy base for this salad and is a nice foil for sweet grapes and fresh greens. Using frozen precooked rice makes the whole dish doable in 15 minutes. The creamy dressing comes together quickly in the blender.

Provided by Food Network Kitchen

Time 15m

Yield 4 servings

Number Of Ingredients 13

3 cups store-bought frozen precooked or leftover brown rice
1/2 cup 2 percent Greek yogurt
2 tablespoons olive oil
1 teaspoon lemon zest, plus 2 tablespoons lemon juice
1 tablespoon mayonnaise
1 small shallot, roughly chopped
1 small clove garlic, roughly chopped
Kosher salt and freshly ground black pepper
1/2 cup walnut pieces
1/2 rotisserie chicken, skin removed and meat shredded (about 3 cups)
2 cups small seedless red grapes
1/2 cup loosely packed flat-leaf parsley leaves
4 cups loosely packed baby spinach

Steps:

  • Put the frozen rice in a medium glass mixing bowl, and break it up using a fork. Drape a damp paper towel directly over the rice, and microwave until the rice is warmed through and softened, 2 to 3 minutes.
  • Meanwhile, puree the yogurt, oil, lemon zest and juice, mayonnaise, shallots, garlic, 1 1/2 teaspoons salt and a few grinds of pepper in a small food processor or a blender until smooth. Toast the walnuts in a small skillet over medium heat until fragrant and just starting to brown, about 2 minutes.
  • Combine the chicken, grapes, parsley and spinach in a large bowl, and toss with half the dressing. Add the warmed rice and toasted walnuts, toss again and serve with the remaining dressing.

Provided by Sarah Cook

Categories     Lunch

Time 40m

Number Of Ingredients 15

500g bag long grain rice
1 tsp turmeric
small bunch coriander , leaves roughly chopped, stalks reserved
100g bag toasted cashew , ½ very roughly chopped
1 cucumber , deseeded and cut into chunks
1 large red onion , finely chopped
about 110g pack pomegranate seeds
400g can black bean , drained and rinsed
2 x roughly 130g packs cooked chicken tikka pieces, chopped
natural yogurt and mini poppadum crisps, to serve (optional)
4 tbsp mango chutney
1 tbsp sunflower oil
1 tbsp brown sugar
1 tbsp medium curry powder , plus 1 tsp for the rice
juice 1½-2 lemon , depending on size

Steps:

  • Cook the rice following pack instructions but add the turmeric and 1 tsp curry powder to the cooking water. Drain well and spread on a tray lined with kitchen paper to cool.
  • Meanwhile, finely chop the coriander stalks and whisk with all the other dressing ingredients, plus seasoning.
  • Tip the rice into a big mixing bowl. Using a fork, break up any large lumps, then mix in the cashews, cucumber, onion, coriander leaves, pomegranate seeds, beans and chicken. Pour over the dressing and lightly stir in, then cover and keep in the fridge. Eat over the next 2 days (as long as it's within the chicken use-by date). Keep a big spoon in the bowl so kids can easily help themselves. Top with a dollop of yogurt and add a handful of poppadum crisps, if you like.

CHICKEN SALAD WITH RICE NOODLES

Chicken Salad With Rice Noodles image

This simple low cal salad is a great way to use up some Asian ingredients. The original recipe suggests to put the salad (chicken vegi) over the rice noodles but I tossed everything together. Recipe source: Bon Appetit (September 2007)

Provided by ellie_

Categories     Chicken Breast

Time 33m

Yield 4-6 serving(s)

Number Of Ingredients 15

4 1/2 ounces rice sticks (malfun)
4 garlic cloves
1/4 cup soy sauce
3 limes, juice of, only
1 tablespoon peanut butter (I used low-fat peanut butter)
2 teaspoons ginger, chopped
1 1/4 teaspoons hot chili paste (sambal oeleck)
1/4 cup canola oil (or your favorite vegetable oil)
3 chicken breasts, cooked and shredded
3 cups napa cabbage, shredded
1 cup carrot, grated
1 red bell pepper, cut into strips
1 red onion, thinly sliced
1 cucumber, halved lengthwise and sliced crosswise
1/3 cup peanuts, chopped (optional)

Steps:

  • Cook noodles in a pot of boiling water until tender (3 minutes); drain; and cut noodles in several places with scissors. (The original recipe suggests to spread noodles out on a platter, but I added them to the large salad bowl instead).
  • Puree next 7 ingredients (garlic - chili paste) in a blender and with machine running add oil, blending until dressing is smooth. Season with salt and pepper if desired. Set aside.
  • In a large salad bowl combine salad ingredients (chicken - cucumbers). (I tossed the salad ingredients with the noodles in the salad bowl).
  • Toss with dressing.
  • Although I tossed the noodles with the salad in the bowl, the original recipe suggests to arrange noodles on a platter and arrange salad on top of noodles and sprinkle with peanuts, passing additional dressing.
  • Can be served warm or is best refrigerated.
