Tips:

  • Use high-quality ingredients: Use fresh, ripe tomatoes, basil, and cheese. Look for good quality canned or jarred artichoke hearts and sun-dried tomatoes, if you're not using fresh.
  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook it until it reaches an internal temperature of 165 degrees Fahrenheit, then remove it from the heat and let it cool slightly before shredding.
  • Shred the chicken by hand: Shredding the chicken by hand will give you more control over the size and texture of the pieces. You can also use a food processor, but be careful not to over-process the chicken, or it will become mushy.
  • Use a light hand when mixing the salad: Over-mixing the salad will break down the tomatoes and make the salad watery. Toss the ingredients gently until they are evenly combined.

Conclusion:

Chicken salad caprese is a delicious and refreshing salad that is perfect for summer gatherings. It's made with fresh, seasonal ingredients and is easy to make. Whether you serve it as a main course or a side dish, this salad is sure to be a hit.
