1 1/4 lbs boneless skinless chicken breasts, (cooked, chilled and diced into small cubes*)
1 1/3 cups red grapes, (halved)
3/4 cup small diced celery
1/2 cup sliced almonds, (toasted)
1/3 cup chopped green onions ((green portion only))
2/3 cup plain fat-free Greek yogurt*
1/4 cup light mayonnaise
2 Tbsp honey
1 Tbsp red wine vinegar
1 Tbsp poppy seeds
1 tsp dijon mustard
3/4 tsp salt, (or to taste)

Steps:

  • For the dressing: Mix all dressing ingredients together in a medium bowl until well combined.
  • For the salad: Add all chicken salad ingredients to a large mixing bowl or a salad bowl. Add dressing and toss to evenly coat.
  • Store in refrigerator. Serve within 1 - 2 hours for best results (it's still good for another day but the almonds soften a little and the grapes juices run into the dressing).

2 1/2 pounds boneless, skinless chicken breasts
4 celery stalks, finely chopped
4 cups seedless grapes, halved
2 cups slivered almonds
2 cups mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons poppy seeds
2 tablespoons dried dill
1 loaf white sandwich bread

Steps:

  • Boil the chicken in a large pot filled with water until done, about 45 minutes. Drain the chicken and set aside to cool. Once the chicken is cooled, dice into small pieces and place in a large mixing bowl. Add the celery, grapes, almonds, mayonnaise, salt, pepper, poppy seeds and dill. Mix until the salad is fully combined. Cut the crusts off of the bread and place a few tablespoons in between each sandwich, pressing to make it easy to pick up. Cut on the diagonal to make 2 triangles to serve.

2 chicken breasts, cooked and cubed
1 cup mayonnaise (feel free to add or take away depending on how mayonnaisey you like it)
2 tablespoons dried onion
1 teaspoon seasoning salt
1/2 cup slivered almonds
1 bunch fresh asparagus
2 cups vinaigrette marinade
8 slices brown bread

Steps:

  • Cook and cube 2 chicken breasts in bite-sized pieces.
  • Cool in fridge for about 10 minutes.
  • Clean asparagus and place in pot on stovetop.
