This dish, adapted from "Mediterranean Cooking" by Paula Wolfert, is almost as easy as a few pan-fried chicken breasts, but its flavors - ginger, turmeric, cumin, Spanish sweet paprika, briny olives - are far more exciting. If you have the time, brining the chicken thighs for a couple of hours in a salt-sugar-water solution before cooking will yield supremely tender meat, but if you're in a rush, skip it. You're still going to fall in love with this dish.

1/2 cup sugar, for brining (optional)
8 chicken thighs with bone, skin removed and discarded
2 onions, peeled, halved and sliced
1 teaspoon ground ginger
2 teaspoons ground turmeric
2 teaspoons ground cumin
1 tablespoon Spanish sweet paprika
4 cloves garlic, peeled and chopped
3/4 cup chopped fresh cilantro leaves
2 cups low-sodium chicken broth
11 ounces pitted green olives in brine, like Goya's, drained
Juice of 1 lemon

Steps:

  • To brine chicken (optional): In a large bowl, combine salt, sugar and 1 cup hot water. Stir until sugar is dissolved. Add 3 cups cold water and chicken pieces. Cover and refrigerate for 2 hours. Drain, rinse, and drain again before using.

4 (4 ounce) bone-in, skin on chicken thighs
salt and ground black pepper to taste
2 tablespoons vegetable oil
1 medium onion, sliced
1 cup apple cider
½ cup chicken stock
½ tablespoon fresh thyme leaves
½ teaspoon salt
2 medium apples, sliced
¼ cup heavy cream
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season both sides of the chicken thighs with salt and pepper.
  • Heat oil in a deep oven-proof skillet or Dutch oven over medium-high heat. Add chicken thighs to the hot oil and cook until browned on both sides, about 4 minutes per side. Transfer chicken to a plate and keep warm.

1 onion, sliced
2 tablespoons water
1 tablespoon margarine
1 dash cinnamon
1 tablespoon cornstarch
1/4 cup white wine

Steps:

  • Heat a sauce pan to medium.
  • Peel and slice the apples into small chunks.
  • Slice the onion.
  • Add the margarine to sauce pan.
  • Add the onions when margarine has melted.
  • Cook until softened - about 5 minutes on medium heat.
  • Add the water, apples and cinnamon and cook until soft - about 10 minutes.
  • If the apples are tart, add 1 tbsp brown sugar.

1 sweet cooking apple, cored and cut into large pieces
3 tablespoons apple cider vinegar
1 1/2 cups low-sodium chicken broth
2 tablespoons cold unsalted butter
1 handful fresh parsley, roughly chopped

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Heat a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and dredge in the flour, shaking off the excess. 3/4 cup flour
1 tablespoon seasoning salt
1 teaspoon cayenne pepper (use (to taste)
1 teaspoon garlic powder
1/4 cup vegetable oil
2 1/2 cups yellow onions, thinly sliced (about 8 cups)
2 tablespoons minced fresh garlic (or to taste)
1 small green bell pepper, seeded and chopped
