2 tablespoons salt
1 tablespoon coarsely ground black pepper
1 tablespoon (packed) golden brown sugar
2 teaspoons garlic powder
1 1/2 teaspoons cornstarch
1 1/2 teaspoons onion powder
1 teaspoon lemon-pepper seasoning with garlic and onion
1 teaspoon chili powder
1 teaspoon cayenne pepper
1/2 cup (1 stick) unsalted butter, room temperature
2 4-pound chickens, quartered, rinsed, patted dry
1 sourdough baguette, cut on diagonal into 3/4-inch-thick slices

Steps:

  • Combine first 9 ingredients in small bowl; whisk spice rub to blend well. Transfer 1 tablespoon spice rub to medium bowl; add butter and mix well. (Rub and seasoned butter can be made 2 days ahead. Cover separately. Chill butter. Bring butter to room temperature before using.)
  • Sprinkle spice rub over both sides of chicken pieces. Arrange chicken pieces on waxed-paper-lined baking sheets. Cover chicken with more waxed paper and let stand at room temperature at least 1 hour and up to 2 hours.
  • Prepare barbecue (medium-high heat). Reserve 4 tablespoons seasoned butter. Spread remaining seasoned butter on 1 side of baguette slices. Place bread slices on platter and cover. Place chicken on grill, skin side up. Grill 20 minutes. Turn chicken over. Grill until skin is deep golden brown, about 15 minutes. Turn chicken again and grill, skin side up, until cooked through (no red shows when chicken is cut at thigh bone), about 5 minutes longer. Transfer chicken to platter. Brush chicken with reserved 4 tablespoons seasoned butter.
  • Grill bread until just golden, about 2 minutes per side. Arrange toasts around chicken and serve.

1/2 cup finely ground roasted peanuts
1/2 cup packed light brown sugar
1 tablespoon kosher salt
2 1/4 teaspoons cayenne
1/2 teaspoon plus a pinch ground bay leaf
1/2 teaspoon plus a pinch ground cloves
1/2 teaspoon plus a pinch ground nutmeg
1/2 teaspoon plus a pinch ground cinnamon
4 chicken thighs, skins on
4 chicken legs, skins on
1 (6-inch) corn tortilla
1 1/4 cups dark chicken stock
1 teaspoon fresh lime juice
1 teaspoon ground chili powder
1/8 teaspoon salt
1 tablespoon smooth peanut butter

Steps:

  • Preheat a grill to medium, and preheat the oven to 350 degrees F.
  • To make the spice rub, combine the peanuts, brown sugar, salt, cayenne, ground bay leaf, cloves, nutmeg, and cinnamon in a bowl. With a small, sharp knife, score each thigh and drumstick twice on each side, 1/2-inch deep. Place the chicken in a large bowl. Add the spice rub and toss to coat evenly.
  • Grill until marked, about 3 minutes per side. Transfer to a roasting pan or baking sheet lined with aluminum foil. 1 large perdue roaster 7 1/2-8 pounds, washed patted dry & giblets removed
1 tsp dried thyme
1 Tbsp each dry mustard, coarse black pepper,garlic powder, onion powder, paprika, kosher salt, dried parsley
4-5 clove garlic
1 each, apple, lemon, orange, onion, quartered
non stick cooking spray

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F.
  • 2. Blend spices in a small bowl or dish, then sprinkle liberally on inside cavity, & on outside between wings and legs & on back side. Tuck wings after seasoning.
  • 3. In a large roasting pan add a cooking rack, then spray generously with non stick cooking spray. Position roaster on rack and fill cavity with onions, garlic and quartered fruit. Place in preheated oven. SPRAY TOP OF ROASTER WITH NON STICK COOKING SPRAY. Bake for about 3 hours depending on the size of your roaster. Or until the POP UP TIMER IN THE ROASTER, POPS UP TO INDICATE THAT THE ROASTER IS DONE.
  • 4. Remove from oven, Pour juices into a small sauce pan and make gravy. Let rest at least 10 minutes before carving to serve. Serve with your favorite side items, potatoes, green Beans or Stuffing with Cranberry Sauce.

2 tablespoons dried green peppercorns
1 1/2 tablespoons dried thyme
