1 onion, chopped
4 cloves garlic, minced
Pinch red pepper flakes
1 tablespoon tomato paste

Tips:

  • Choose the Right Chicken: Use a combination of dark and white meat chicken for a flavorful stew. Bone-in, skin-on chicken pieces add more flavor to the broth.
  • Brown the Chicken: Browning the chicken before simmering it adds depth of flavor to the stew. Do this in batches to avoid overcrowding the pot and ensure even browning.
  • Use Quality Ingredients: Fresh, ripe tomatoes, flavorful broth, and aromatic spices make a big difference in the taste of the stew. Use homemade or low-sodium broth for better control over the flavor.
  • Simmer Low and Slow: Allow the stew to simmer for at least 1 hour, or up to 2 hours, over low heat. This allows the flavors to meld and develop, resulting in a rich and satisfying stew.
  • Adjust Seasoning: Taste the stew towards the end of cooking and adjust the seasoning as needed. Add more salt, pepper, or herbs if desired.
  • Serve with Accompaniments: Serve the stew with crusty bread, mashed potatoes, rice, or pasta for a complete meal. A dollop of sour cream or yogurt and a sprinkle of fresh herbs add extra flavor and texture.
