ALMOST LASAGNA -- $1.50 PER SERVING
We make a version of lasagna that I call "Almost Lasagna" that is very versatile and easy to make ahead and heat later. Add crusty bread and bagged salad, and dinner is complete! To make the dish even cheaper, buy cheeses, pasta and sauce in bulk at your local warehouse store. Double or even triple the recipe and store in the freezer to bake off later.

CHICKEN STROGANOFF I
I wanted something like the traditional beef stroganoff and threw this one together, writing down everything as I went so I wouldn't forget. I served with noodles, but rice would be great, too. Asparagus for a vegetable and a green or fruit salad is great! Nutmeg seems to be the secret ingredient of many Stroganoff recipes.

Tips:
- Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling.
- Use a large skillet or Dutch oven: This will give you plenty of room to cook the chicken and vegetables without overcrowding.
- Don't overcrowd the pan: If you add too much chicken or vegetables to the pan at once, they will not cook evenly.
- Cook the chicken in batches: If you are using a large amount of chicken, cook it in batches to avoid overcrowding the pan.
- Use a meat thermometer: This is the best way to ensure that the chicken is cooked through without overcooking it.
- Add the dairy products at the end: This will help prevent them from curdling.
- Season to taste: Taste the sauce before serving and add more salt, pepper, or other seasonings as needed.
Conclusion:
Chicken Stroganoff is a delicious and versatile dish that can be enjoyed for lunch or dinner. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a delicious and healthy Chicken Stroganoff that the whole family will love.
