Steps:
- Cut a 1/2" thick slice from the side of each pepper, reserving slices; remove seeds.
- Place peppers in boiling water, boil 5 minutes, drain, set aside.
- Coat a large skillet or wok with Pam; add sesame oil, and place over med heat until hot.
- Add garlic and gingerroot; stir fry 30 seconds.
- Add carrots and green onions; stir fry 2 minutes more.
- Remove from heat.
- Add chicken and remaining ingredients, stirring well.
- Spoon 3/4 cup mixture into each reserved pepper.
- Top with reserved pepper slices.
- Arrange peppers, cut side up, in a 10 x 6 x 2" baking dish.
- Cover and bake 350 degrees for 30 minutes or until thoroughly heated.
Tips:
- Choose the Right Peppers: Select large, firm bell peppers with smooth skin and vibrant color. Look for peppers with thick walls, as they can better hold the stuffing and prevent it from becoming soggy.
- Prep the Peppers Properly: Cut the tops off the peppers and remove the seeds and ribs. Rinse the peppers thoroughly and pat them dry with a paper towel. This will help the stuffing adhere better.
- Make a Flavorful Stuffing: The stuffing is the heart of this dish, so make sure it's packed with flavor. Use a combination of ground chicken, cooked rice, aromatics (like onions, garlic, and celery), spices, and herbs. You can also add some cooked beans or corn for extra texture and nutrition.
- Don't Overstuff the Peppers: While you want the peppers to be well-stuffed, avoid overfilling them. Leave some space at the top of each pepper so that the rice can expand during cooking.
- Use a flavorful Sauce: The sauce adds moisture and flavor to the stuffed peppers. You can use a simple tomato sauce, a more complex enchilada sauce, or even a creamy cheese sauce. Choose a sauce that complements the flavors of the stuffing.
- Bake until Tender: Bake the stuffed peppers in a preheated oven until the peppers are tender and the stuffing is cooked through. This usually takes around 30-40 minutes.
Conclusion:
Chicken Stuffed Chili Bell Peppers are a delicious and versatile dish that can be tailored to your taste preferences. With endless variations of stuffing and sauce, you can create a unique and satisfying meal that everyone will enjoy. Serve them as a main course with a side of salad or roasted vegetables, or pack them for a flavorful and portable lunch. The combination of tender bell peppers, flavorful chicken stuffing, and a rich sauce makes this dish a true crowd-pleaser.
