I especially love serving this for Football Brunch... Holds 'em over till halftime so I can watch the game too! Serve with sour cream and enjoy!

5 eggs, beaten
2 cups milk
1 (8 ounce) jar chunky salsa
½ green bell pepper, chopped
½ onion, chopped
1 (16 ounce) package shredded Mexican-style cheese blend
salt and black pepper to taste
1 pound ground beef
1 (1 ounce) packet taco seasoning mix
1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Whisk together the eggs, milk, salsa, bell pepper, onion, and Mexican-style cheese in a bowl. Season with salt and pepper. Set aside.
  • Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, 8 to 10 minutes. 2 1/2 cups shredded deli rotisserie chicken
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1/4 cup water
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 can (16 oz) Old El Paso™ refried beans
1 1/4 cups shredded Mexican cheese blend (5 oz)
Diced avocado, chopped tomato, green onions, shredded lettuce, salsa and sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray bottom of 13x9-inch (3-quart) baking dish with cooking spray. Place taco shells standing up and together in dish; set aside.
  • In 10-inch nonstick skillet, cook chicken, taco seasoning mix, water and chiles over medium heat 5 to 6 minutes, stirring frequently, until chicken is heated through. Remove from heat.

Dough for 2 single-crust pies
2 cups cubed cooked chicken
2 envelopes taco seasoning, divided
2/3 cup salsa
2 cups shredded cheddar cheese
8 large eggs
2 cups half-and-half cream
2 tablespoons butter, melted
1 can (4 ounces) chopped green chiles
1/2 cup sliced ripe olives

Steps:

  • On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Repeat with remaining dough. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crusts with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. ½ cup mayonnaise
2 tablespoons jerk seasoning, divided
2 tablespoons lime juice, divided
1 tablespoon olive oil
1 ½ pounds boneless, skinless chicken thighs
1 (20 ounce) can pineapple rings, drained
8 (6 inch) flour tortillas
1 cup shredded cabbage
½ small red onion, minced
½ cup chopped fresh cilantro

Steps:

  • Whisk mayonnaise, 1 tablespoon jerk seasoning, and 1 tablespoon lime juice together in a small bowl. Set aside.
  • Whisk olive oil, remaining jerk seasoning, and remaining lime juice together in a separate bowl. Add chicken and stir to coat.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place pineapple slices on the top rack of the grill. Place chicken directly on the grill. Cook for 6 minutes. 1 lb ground beef or 1 lb ground turkey
1 cup chopped onion
1 clove garlic, minced
1 can chopped green chili (optional)
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon cumin
2 cups shredded monterey jack cheese or 2 cups monterey jack pepper cheese
8 eggs, beaten
2 1/2 cups sour cream
2 chopped tomatoes
shredded lettuce
sliced black olives

Steps:

  • Line a greased 13x9x2 baking dish with the tortillas, tearing to fit if necessary.
