Steps:
- Preheat the oven to 400 degrees F.
- Combine the breadcrumbs and the parsley in a medium plate, mixing thoroughly.
- Sprinkle the chicken with salt and pepper. Place the chicken in the flour to cover, then into the egg wash and finally into the breadcrumb mixture.
- Place the saute pan on medium heat, add some oil and add the chicken to pan. If the oil gets too hot it will burn the outside of the chicken before the inside cooks. Once the edges of the chicken start to brown, turn over. Top each breast with some marinara sauce and a slice of cheese.
- Place the chicken on a sheet tray and then put it in the oven. Take out the chicken when the cheese melts.
- In another pan set over medium-high heat, add some oil. Add the garlic and saute, followed by the broccoli rabe. Toss the two together in the pan. Add touch of butter to glaze and toss again.
- To serve, pour some of the remaining marinara sauce on the plate, then place some broccoli rabe in the center. Finally, place your chicken on top. Repeat for the remaining pieces of chicken.

BROCCOLI CHICKEN TORTELLINI
When I concocted this recipe years ago, I had just discovered fresh tortellini. I added the alfredo sauce and broccoli and liked the way it tasted. I serve it with French or sourdough bread.

Steps:
- Fill a pot with water and place over high heat. Bring to a roiling boil.
- In a microwave-safe dish, combine oil, garlic, chicken broth, and lemon juice. Add chicken and microwave on high for 1 minute and 30 seconds.
- When water boils, add tortellini to pot and stir. When water returns to a gentle boil, add broccoli and stir. Stir occasionally until tortellini is done, approximately 8-11 minutes Drain tortellini and broccoli in a colander. Do not rinse.
- Add sauce and chicken to pot. Add tortellini and 1/3 cup shredded cheese. Toss well to coat tortellini and broccoli and sauce.
- To serve, divide pasta and sauce between 4 bowls. Garnish with remaining cheese. If desired, season with salt, pepper, and crushed red pepper.
Tips:
- Use fresh tortellini. Fresh tortellini will have a more delicate flavor and texture than dried tortellini. If you can't find fresh tortellini, you can substitute dried tortellini, but be sure to cook it according to the package directions.
- Choose a good quality broccoli rabe. Broccoli rabe should be deep green and have firm leaves. Avoid broccoli rabe that is wilted or has yellow leaves.
- Don't overcook the broccoli rabe. Broccoli rabe should be cooked until it is tender-crisp. If you overcook it, it will become mushy.
- Use a good quality olive oil. Olive oil will add a delicious flavor to the dish. If you don't have olive oil, you can substitute another type of oil, such as vegetable oil or canola oil.
- Don't be afraid to experiment with different ingredients. This recipe is a great starting point, but you can add or remove ingredients to suit your own taste. For example, you could add some chopped sun-dried tomatoes, roasted red peppers, or artichoke hearts.
Conclusion:
Chicken tortellini with broccoli rabe is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it is sure to please everyone at the table. So next time you're looking for a quick and easy dinner option, give this recipe a try.
