CHICKEN WITH COCA-COLA AND LEMONS
Like many cooks, I keep a file of recipes I want to try. When I looked through it recently, there were a preponderance of lemon recipes, including one for roasted chicken with lemons and Coca-Cola from Frédérick Grasser-Hermé. Again, the savory and sweet. A food writer who has worked with chefs like Alain Ducasse, Grasser-Hermé is also the wife of the Parisian pastry chef Pierre Hermé. It humored me that a French cook would deign to baste her chicken with Coke. But it makes perfect sense: like many drinks - wheat beer, iced tea, sangria, Vietnamese sugar-cane juice - Coca-Cola is always improved by a wedge of lemon.

Steps:
- In a large, rimmed dish, sprinkle the lemon juice over both sides of the chicken. Rub with the salt and pepper, then the lemon zest. Cover and chill for 4 hours.
- Preheat the oven to 350 degrees. Spread the chicken, skin side up, in a roasting pan. Reserve the lemon juice, diluting it with 1 tablespoon water. Cover the chicken with foil and roast for 30 minutes, basting it with the lemon juice every 5 to 10 minutes.
- Meanwhile, cover the bottom of a medium sauté pan with a thin film of olive oil. Place over medium heat and add the onion and ginger. Cook until the onions are soft and golden, about 8 minutes, then stir in the garlic. Season with salt and pepper.
- After the chicken has cooked for 30 minutes, lower the heat to 300 degrees and remove the foil. Begin basting every 10 minutes with the Coca-Cola, until the chicken juices run clear, about 1 hour more. Reheat the onions, adding the vinegars and 2 tablespoons of the chicken juices. Cook for 1 minute. Serve the chicken topped with the onions and pan drippings.

ROASTED SODA CAN CHICKEN
A different take on the typical beer can chicken. I inject the butter-based rub under the skin for better flavor. The steam from the liquid makes this moist and tender.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Remove the giblets and rinse chicken inside and out with water. Pat dry with paper towels.
- Stir together butter, brown sugar, garlic, salt and pepper, and half the lemon juice in a bowl. Rub the mixture over the entire chicken, including the cavity and beneath the skin.
- Discard 1/2 of soda, leaving the rest in the can, and pour the remaining lemon juice into the can. Place the can on a baking sheet, and set the chicken upright on the can, inserting it into the cavity of the chicken. Plug the neck opening of the chicken with the onion and a squeezed lemon half to retain steam.
- Roast the chicken in the preheated oven for 1 1/2 to 2 hours, to a minimum internal temperature of 180 degrees F (80 degrees C). Remove the chicken from the oven, discard the soda can, and cover chicken with a doubled sheet of aluminum foil to rest in a warm area for 10 minutes before slicing.

Steps:
- Melt the butter/margarine in the pot at medium heat.
- Add the garlic.
- Once the garlic is browning, add your chicken pieces.
- When chicken is lightly browned on both sides, add the onions diced.
- Once onions are almost fully cooked, add the oxtail soup.
- Stir lightly to spread the oxtail over the chicken pieces, then add half the can of coke and continue stirring at medium heat.
- Boil your potatoes and carrots (seperately) in the meantime. I prefer to do them in the microwave which is fairly quick.
- When the sauce has begun to thicken, add the potatoes and carrots cut into bite sizes.
- Simmer at low-medium heat.
- Add the bay leaf.
- Taste it, if it's too sour still, add a bit more coke.
- Serve warm over a bed of rice or pasta.

CARAMELIZED LEMON CHICKEN
Making a chicken shine with glaze typically requires combining a form of sugar (like honey or maple syrup) with something to balance that sweetness, like lemon juice. But there is an ingredient in your baking arsenal that does both of those things: lemon curd. The sugars in the curd help the skin caramelize to a deep mahogany, while the curd's fat and moisture keep the meat juicy. Spread it on chicken and each bite gets perfumed with sunny lemon. While you can make this recipe using chicken just as you purchased it, the added step of removing the backbone (also known as spatchcocking or butterflying) ensures all parts get browned.

Steps:
- Heat the oven to 400 degrees. Season the lemon curd with 2 teaspoons salt and 1 teaspoon black pepper.
- To butterfly the chicken, place the chicken on a cutting board, breast side down. Using sharp kitchen shears, remove the backbone by cutting on either side of the backbone. (Save the backbone for stock.) Flip the chicken, setting it breast side up, and flatten by pressing firmly in the center; you should hear a crack.
- Pat chicken dry. Season the chicken on both sides with 2 teaspoons salt and a generous grind of black pepper. Use the handle of a fork or spoon to loosen the skin from the chicken breasts and thighs (you'll find openings at their tops).
- Spread about three-quarters of the lemon curd between the skin and meat. Use your fingers to massage the curd around so it spreads out under the skin. Spread the rest of the lemon curd in a thin layer all over the chicken skin. Drizzle with the olive oil.
- Pour 3/4 cup water into a large (at least 12-inch) oven-safe skillet, shallow roasting pan or sheet pan. (The water keeps the pan drippings from burning and keeps the chicken moist.) Add the chicken, skin side up. Tuck the wings under to prevent burning and turn the legs so the thighs face up. Roast until a thermometer registers 165 degrees in the thickest part of the thigh, 45 minutes to 1 hour, starting to check the chicken at 30 minutes. If at any point it starts getting too brown, cover it with foil. Let rest 10 minutes before carving.
Tips:
- Choose the right chicken pieces for your dish. Bone-in, skin-on chicken thighs or drumsticks work well, as they can withstand the long cooking time and remain moist.
- Brown the chicken before adding the Coca-Cola and lemon juice. This will help to develop flavor and color.
- Use a good quality Coca-Cola. A flat or diet Coca-Cola will not work as well as a regular Coca-Cola.
- Add some spices and herbs to the dish to enhance the flavor. Garlic, onion, paprika, and chili powder are all good options.
- Cook the chicken until it is fall-off-the-bone tender. This will take about 1 hour and 30 minutes to 2 hours.
- Serve the chicken with rice, mashed potatoes, or vegetables.
Conclusion:
Chicken with Coca-Cola and lemons is a delicious and easy-to-make dish that is perfect for a weeknight meal. The Coca-Cola and lemon juice give the chicken a unique and flavorful taste that is sure to please everyone at the table. So next time you're looking for a new chicken recipe, give this one a try. You won't be disappointed!
