CRANBERRY CHICKEN

Cranberry Chicken image

There are quite a few recipes for Cranberry Chicken, but this one is a little different. I love this chicken! I cook on low in crock pot for at least 6 hours, the yummmy scent fills the house. From Recipetips.com

Provided by True Texas

Categories     One Dish Meal

Time 1h45m

Yield 10 serving(s)

Number Of Ingredients 6

10 pieces chicken breasts (skinless)
15 ounces whole berry cranberry sauce (1 can)
3/4 ounce dry onion soup mix (1 envelope)
8 ounces Catalina dressing (fat free)
fresh rosemary, a few needles from the sprig (optional)
1/4 cup dried cranberries (optional)

Steps:

  • Preheat oven to 350°F
  • Mix onion soup, whole cranberry relish and Catalina salad dressing together in a bowl.
  • Place chicken breasts in the bottom of the baking dish and pour the cranberry mixture over the chicken. Sprinkle a little fresh rosemary and dried cranberries over the chicken, if desired.
  • Cover the dish and bake for 45 minutes. Remove the cover and bake an additional 15-20 minutes. Serve.

Tips:

  • To make the cranberry compote, use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they may not be as tart.
  • If you don't have any orange zest, you can use 1/4 teaspoon of ground orange peel.
  • To make sure the chicken is cooked thoroughly, use a meat thermometer to check that the internal temperature has reached 165 degrees Fahrenheit.
  • If you don't have any chicken broth, you can use water instead. However, the chicken broth will add more flavor to the dish.
  • If you want a thicker compote, you can add a cornstarch slurry to it. To make a cornstarch slurry, mix 1 tablespoon of cornstarch with 1 tablespoon of water until smooth. Then, add it to the compote and cook over medium heat until thickened.

Conclusion:

Chicken with Cranberry Compote is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is moist and flavorful, and the cranberry compote is tart and tangy. This dish is sure to be a hit with your family and friends.
