Steps:

  • Season chicken well on both sides with salt and pepper. In a large sauté pan, heat olive oil over medium heat. 3 1/2 pounds mixed chicken drumsticks and thighs
Salt and pepper
3 tablespoons unsalted butter
1 head garlic, broken into unpeeled cloves
1 cup red wine vinegar
1 pound tomatoes, roughly chopped
1 tablespoon tomato paste
4 sprigs fresh thyme
4 sprigs fresh flat-leaf parsley
1 bay leaf
1 cup chicken stock
Chopped fresh parsley leaves, as needed

Steps:

  • Season the chicken with salt and pepper. Melt 2 tablespoons of the butter in a large skillet until foaming, then, a few pieces at a time, brown the chicken well on all sides. You're not cooking the chicken here; just making the skin crisp and giving it color, so 5 minutes per side is about right. Remove the chicken to a plate.

1 teaspoon black pepper
1 tablespoon vegetable oil
3 tablespoons unsalted butter
4 large garlic cloves, finely chopped
1/3 cup finely chopped shallots (about 2 medium)
1 medium carrot, finely chopped
2 fresh thyme sprigs
2 Turkish bay leaves or 1 California
1 tablespoon tomato paste
1 cup dry red wine
1/2 cup red-wine vinegar
2 tablespoons sugar
1 cup reduced-sodium chicken broth (8 fl oz)

  • Cook chicken:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat chicken dry and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. 1/4 cup olive oil
4 tablespoons unsalted butter
1/4 cup red wine vinegar
1/4 cup Champagne vinegar or other white wine vinegar
4 shallots, peeled and finely chopped
1/2 cup French chardonnay or other white wine
1 1/2 cups chicken stock, preferably homemade
6 to 8 plum tomatoes, peeled, seeded, and finely chopped
1/3 cup heavy cream

  • Season chicken with salt and pepper. In a large cast-iron skillet, heat the oil and butter over medium-high heat, and sauté chicken until golden brown, 5 to 7 minutes a side. Transfer chicken to a platter.
  • Pour off all but 1 tablespoon fat from the skillet. Add the red and white vinegars, and deglaze the pan, scraping the bottom with a spatula. 2 teaspoons olive oil
½ medium red onion, thinly sliced

¾ cup shredded mozzarella cheese

1/4 cup vinegar
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
1/8 teaspoon salt

  • Preheat the oven to 450°F. Set a large skillet-preferably with steep sides to minimize spattering-over medium-high heat. Add 2 tablespoons butter and wait a minute. When it is good and hot, place the chicken in the skillet, skin side down. Cook undisturbed for about 5 minutes, or until the chicken is nicely browned. Turn and cook for 3 minutes on the other side.
