CHICKPEA AND TUNA SALAD

Chickpea and Tuna Salad image

Found this in Lidia Italy at Home, and it looks easy so how can it be bad with these ingredients? For a taste of it on a bruschetta grill slices of country bread. Allow for cooling time. Update - I made this again the other night and use crushed red pepper flakes instead of black pepper and I too reduced the amount of oil that I used. Also, served it with avocado slices(drizzled with lime juice)on the side. Delicious!

CHICKPEA "TUNA" SALAD SANDWICHES

Chickpea

Chickpeas are surprisingly fishy, and when they're mashed, taste a lot like tuna! Mix it with nori and the usual tuna salad suspects (like carrots and onion) for a vegan 'tuna' sandwich.

Provided by isachandra

Categories     Main Dish Recipes     Sandwich Recipes

Time 30m

Yield 4

Number Of Ingredients 13

½ sheet nori (dried seaweed), torn into small pieces
1 (15 ounce) can no-salt-added chickpeas, drained and rinsed
¼ cup vegan mayonnaise
⅓ cup minced or finely grated carrot
⅓ cup finely diced celery
2 tablespoons dried minced onion
2 tablespoons fresh dill
½ teaspoon salt
black pepper to taste
8 slices whole wheat bread, toasted
¼ cup vegan mayonnaise
8 lettuce leaves
8 tomato slices

Steps:

  • Pulse nori in a blender until it's a fine powder. Set aside to let dust settle.
  • Mash chickpeas with a sturdy fork or a small-holed potato masher (chickpeas slip through larger, zigzag-type mashers) in a large bowl until most are broken up. Do not overmash--they should retain some texture.
  • Stir in mayo and mash a little more. Stir in nori powder, carrot, celery, onion, dill, salt, and pepper. Cover and chill at least 15 minutes or up to 3 days.
  • For the sandwiches, slather toast with mayo (about 1 1/2 teaspoons per slice). Layer salad, lettuce, and tomato between toast slices. Cut sandwiches in half diagonally.

Spread this on some toasted bread with green leaf lettuce or dip into it with crackers. The best part? It's cholesterol and mercury free and super yummy!

BETTER-THAN-TUNA, CHICKPEA SALAD

Inspired from the recipe in Vegan Table. "This recipe has all the flavor of the lunchtime staple but leaves the cholesterol, and mercury behind" I usually cut this recipe in HALF, and as you can see from the list of ingredients, that is quite easy to do! I also like to add dill pickle to mine, which I've listed below. Some chopped scallion might be nce too... ^_^

MOCK TUNA SALAD (CHICKPEA SALAD)

Mock Tuna Salad (Chickpea Salad) image

Made with chickpeas (garbanzo beans), this is a wonderful sandwich filling, especially for vegetarians who miss tuna salad. I liked it more oniony so I added a little extra minced onion, but it's still wonderful without it. I enjoyed this the most stuffed in pita bread with slices of ripe plum tomatoes, and also would serve it often on crackers as a snack or appetizer.

Categories     Lunch/Snacks

Time 10m

Yield 3-4 serving(s)

Number Of Ingredients 7

1 (16 ounce) can chickpeas, mashed (garbanzo beans)
2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish
2 green onions, finely chopped
salt and pepper
1 tablespoon finely minced yellow onion (optional)

Steps:

  • In a medium bowl, combine mashed chickpeas, mayonnaise, mustard, relish, chopped green onions, salt, pepper, and yellow onion (if desired).
  • Mix well.

Tips:

  • Use high-quality canned tuna. Look for tuna that is packed in water or olive oil. Avoid tuna that is packed in oil, as it will make your salad greasy.
  • Drain the tuna well before adding it to the salad. This will help to prevent the salad from becoming watery.
  • Use fresh, crunchy vegetables. Vegetables such as celery, carrots, and cucumbers add color, texture, and flavor to the salad.
  • Add some fresh herbs to the salad for extra flavor. Herbs such as dill, parsley, and chives pair well with tuna salad.
  • Use a light dressing. A simple vinaigrette or mayonnaise-based dressing is all you need to bind the salad together.
  • Season the salad to taste. Add salt, pepper, and other spices to taste.
  • Serve the salad immediately or chill it for later. Tuna salad can be served immediately or chilled for up to 3 days.

Conclusion:

Chickpea tuna salad is a healthy, delicious, and versatile dish that can be enjoyed for lunch, dinner, or a snack. It is a great way to use up leftover tuna and chickpeas, and it is also a good source of protein, fiber, and omega-3 fatty acids. With a few simple ingredients and a little bit of time, you can make a delicious chickpea tuna salad that your whole family will love.
