Time 2h20m

Yield 6 servings

Number Of Ingredients 27

3 tablespoons unsalted butter
1 medium Spanish onion, coarsely chopped
1 large carrot, coarsely chopped
2 stalks celery, coarsely chopped
3 cloves garlic, finely chopped
2 (1 1/2 pound) live lobsters
1/2 cup water, plus 3 cups
1/4 cup dry sherry
2 cups white wine
8 sprigs parsley
8 sprigs cilantro
1 bay leaf
8 white peppercorns
2 roasted poblano peppers, peeled, seeded and pureed
Salt
2 cups heavy cream
1 cup milk
2 tablespoons honey
Freshly ground white pepper
Toasted Corn Relish, recipe follows
2 ears fresh corn, silks removed and ears soaked in cold water for 5 minutes
1/4 cup finely diced red onion
1 roasted poblano, peeled, seeded and finely diced
2 tablespoons fresh lime juice
1 tablespoon olive oil
2 tablespoons finely chopped fresh tarragon
Salt and freshly ground pepper

Steps:

  • Heat butter in a large saucepan over medium heat. Add the onions, carrots, celery, and garlic and cook until soft. Do not allow them to obtain color.
  • Plunge a knife between the eyes of the lobsters to dispatch them. Then split them in half lengthwise, and remove the sand sack. Separate into tail, claw, and chest pieces and add the sections to the vegetables. Add 1/2-cup water and cover the pan with a lid for 4 minutes. Remove lid and allow the water to evaporate, then turn off the heat. Remove the lobster pieces from the pan and set aside. When cool enough to handle, remove the meat from the tails and claws, and reserve the meat.
  • Chop the shells into smaller pieces and return to the pan. Add the sherry and ignite. When the flames subside, add the wine and reduce by half. Add the water, parsley, cilantro, bay leaf, white peppercorns, poblano puree, and salt, to taste and cook over low heat for 20 minutes.
  • Remove most of the shells and pass the soup through a sieve into a clean medium saucepan, add the reserved lobster meat and cook until reduced to 2 cups. Blend the soup in a blender in batches then strain through a sieve into a clean, medium saucepan over medium low heat. Place the cream and milk in a small saucepan and reduce by half. Add the cream and cook until just heated through and season with honey, salt and pepper. Ladle into bowls and garnish with Toasted Corn Relish.
  • Preheat the oven to 400 degrees. Preheat grill to high. Remove ears from water. Roast corn for 10 minutes. Remove from the oven and grill in the husk for 15 to 20 minutes.
  • Peel the husk away, and cut corn away from the cob. Combine the corn kernels in a medium bowl with the red onion, roasted poblano, lime juice, olive oil, and tarragon. Season with salt and pepper, to taste.

Categories     main-dish

Time 2h40m

Yield 4 servings

Number Of Ingredients 15

1 small white onion, peeled and minced
1 serrano chile, stemmed, seeded and minced
2 bunches cilantro leaves, leaves only chopped
1 teaspoon salt
Juice of 1 lime
1 tablespoon olive oil
4 dried Pasilla chiles
4 arbol chiles
2 teaspoons cumin seeds
1 garlic clove, minced
1 jalapeno chile, stemmed, seeded and coarsely chopped
1/2 cup red wine vinegar
1/2 cup olive oil
1 1/2 teaspoons salt
2 pounds trimmed skirt steak

Steps:

  • To make the relish, combine all the ingredients in a bowl and set aside, covered, in the refrigerator for up to 2 hours.
  • To make the marinade, remove stems of the dried California and arbol chiles and shake out and discard seeds. Place chiles in a small saucepan with enough water to cover. Bring to a boil, remove from heat and let sit 20 minutes to soften. Drain and discard the water.
  • In a small frying pan over moderate heat, toast the cumin seeds for 2 to 3 minutes or until aromas are released. Combine softened chiles, garlic, cumin seeds, jalapeno and red wine vinegar in a blender and puree at high speed 1 to 2 minutes, or until thick and smooth. Add olive oil and salt and blend again until well mixed.
  • Place skirt steak in a large shallow glass or enamel dish and cover with marinade. Set aside at room temperature for 1 hour. To cook, preheat a grill or broiler. Grill steaks quickly for 3 to 4 minutes per side or until seared on the outside and pink inside. To serve, slice steaks against the grain on the diagonal and fan slices out on a platter. Serve the relish on the side.

GHOST CHILE SWEET PICKLE RELISH

Ghost Chile Sweet Pickle Relish image

After often being disappointed in the flavor and heat intensity of commercially produced hot relishes, I decided to make my own! This relish is both sweet and super duper hot. It's great on hotdogs, hamburgers, and sandwiches!

Time 9h15m

Yield 36

Number Of Ingredients 8

8 large pickling cucumbers, diced
1 large yellow onion, diced
1 red bell pepper, diced
3 ghost chile peppers, diced
2 tablespoons salt
2 cups white sugar
2 cups apple cider vinegar
6 half pint canning jars with lids and rings

Steps:

  • Combine cucumbers, onion, red bell pepper, and ghost chile peppers in a large pot; add salt and toss to coat. Cover pot with a lid and refrigerate, 8 hours to overnight.
  • Mix sugar and vinegar into cucumber mixture and simmer over medium heat, stirring frequently, until relish is tender, about 45 minutes.
  • Sterilize the jars and lids in boiling water for at least 10 minutes. Pack relish into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Label and date the jars and store in a cool, dark area.

PICKLED-CHILE RELISH

Pickled-Chile Relish image

Provided by Ian Knauer

Categories     Condiment/Spread     Sauce     Vinegar     Hot Pepper     Thyme     Gourmet

Yield Makes about 1 pint

Number Of Ingredients 6

1 head garlic
1/2 pound fresh red, yellow, and/or orange hot chiles
1 cup distilled white vinegar
1 tablespoon sugar
1 bunch thyme
Equipment: 4 (1/4-pint) canning jars with screw bands and lids; canning tongs

Steps:

  • Make chile relish:
  • Preheat oven to 350°F with rack in middle. Cut off and discard top of garlic head to expose cloves, then wrap head in foil and bake until very tender, about 45 minutes. Cool to warm, then peel cloves and transfer to a food processor.
  • Stem chiles and add to processor along with vinegar, sugar, and 1 1/2 teaspoons salt. Pulse until finely chopped.
  • Simmer chile mixture in a small saucepan, stirring, 2 minutes.
  • Sterilize jars and lids:
  • Wash jars, lids, and screw bands in hot, soapy water, then rinse well. Dry screw bands. Put empty jars on a rack in a boiling-water canner or a deep 6- to 8-quart pot and add enough hot water to cover by 2 inches. Bring to a boil, covered, then boil 10 minutes. Remove canner from heat, leaving jars in water, covered. Heat lids in water to cover by 2 inches in a small saucepan until water registers 180°F on an instant-read or candy thermometer (do not let boil). Remove from heat. Keep jars and lids submerged in hot water, covered, until ready to use.
  • Carefully remove jars and lids with canning tongs, then drain jars upside down on a clean kitchen towel and quickly dry lids.
  • Fill, seal, and process jars:
  • Place 2 or 3 thyme sprigs in each jar and ladle sauce (while still hot) into jars, leaving 1/4 inch of space at top. Run a clean rubber spatula between sauce and sides of jars to eliminate air bubbles. Wipe off rims of filled jars with a damp clean kitchen towel, then firmly screw on lids with screw bands.
  • Put sealed jars in canner (on rack) or pot and add enough hot water to cover by 2 inches. (If you have a jar that is partially full, do not process it. Cover it with a lid and screw band, then keep in refrigerator.) Bring to a full boil, covered, then boil, covered, 10 minutes. Transfer jars with canning tongs to a towel-lined surface to cool. Jars will seal and eventually have concave lids (you may hear a ping).
  • After jars have cooled, 12 to 24 hours, press center of each lid to check that it's concave, then remove screw band and try to lift lid with your fingertips. If you can't, the lid has a good seal. Replace screw band. Put any jars that haven't sealed properly in the refrigerator and use them first.

CHOPPED-CHILE RELISH

Chopped-Chile Relish image

You can make a mild green relish or a spicy red one depending on the variety of chiles you use.

Provided by Martha Stewart

Categories     Food & Cooking     Cuisine-Inspired Recipes

Time 1h15m

Yield Makes about 1 1/2 cups

Number Of Ingredients 4

8 ounces mild (such as Anaheim or banana) or spicy (such as Fresno or jalapeno) chile peppers, finely chopped
1/4 cup extra-virgin olive oil
3 tablespoons red-wine vinegar
1/4 teaspoon coarse salt

Steps:

  • Stir together peppers, oil, vinegar, and salt in a bowl. Let stand 1 hour, or refrigerate, covered, up to 3 days; bring to room temperature before serving.

Tips:

  • Choose the right chiles: Different types of chiles have different flavors and heat levels. For a mild relish, use poblano or Anaheim chiles. For a medium-heat relish, use jalapeños or serrano peppers. For a hot relish, use habaneros or cayenne peppers.
  • Roast the chiles: Roasting the chiles brings out their flavor and makes them easier to peel and chop. You can roast chiles over an open flame, on a grill, or in the oven.
  • Remove the seeds and ribs: The seeds and ribs of chiles are the hottest parts, so removing them will help to reduce the heat of the relish. You can remove the seeds and ribs by using a knife or a spoon.
  • Chop the chiles finely: The finer you chop the chiles, the milder the relish will be. If you want a very mild relish, you can even puree the chiles in a food processor.
  • Use fresh ingredients: Fresh ingredients will give your relish the best flavor. If you can, use fresh chiles, tomatoes, onions, and cilantro.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You can also add a bit of sugar to balance out the heat of the chiles.

Conclusion:

Chile relish is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It's perfect for topping tacos, burritos, and enchiladas. It can also be used as a marinade for grilled meats or as a dipping sauce for chips. If you're looking for a way to add some spice to your next meal, give chile relish a try.
