2 cups frozen corn
1 5-ounce can evaporated milk (about 2/3 cup)
3 scallions, thinly sliced

2 tablespoons lime juice
2 1/2 tablespoons light brown sugar
4 teaspoons chili powder
1 tablespoon paprika
3/4 teaspoon garlic powder
3 ears corn on the cob, husked
4 (10 ounce) New York strip steaks
2 roma tomatoes, diced
1/3 cup red onion, diced
2 tablespoons cilantro, chopped
2 tablespoons parsley, chopped

Steps:

  • Coat grill rack with non stick cooking spary. Preheat grill to high direct heat (400 degrees). Meanwhile, combine oil and lime juice in small bowl. 1/2 teaspoon chili powder
1/2 teaspoon salt, to taste
1/4 teaspoon black pepper, freshly ground, to taste
1 pinch sugar
1 1/2-2 lbs flank steaks
1 -2 teaspoon olive oil
1 bell pepper, cut into 1/4-inch dice (about 1 cup, use red, yellow, orange)
