CURRY FISH AND RICE

I don't know where my mom found this recipe, but I remember eating it when I was little. This is a great recipe for when you don't have time to watch everything in the kitchen, but it's nice enough that I've served it to company!

STEAMED FISH WITH LIME AND CHILE

Steamed Fish With Lime and Chile image

This is the definition of minimalist Thai cooking. The steam not only gently cooks the fish until just tender but also creates an instant, complex sauce from a handful of basic ingredients. Scoring the fish's flesh allows more of the flavor to season the fish and facilitates faster steaming. The fish is cooked on a plate that fits inside the steamer, to catch the juices.

Yield Makes 2 servings

Number Of Ingredients 13

4 large garlic cloves, crushed
2 tablespoons chopped cilantro stems plus cilantro leaves for garnish
1 tablespoon chopped green Thai chiles
2 tablespoons (or more) fresh lime juice
2 tablespoons Thai fish sauce (nam pla)
1 tablespoon sugar
Pinch of freshly ground white or black pepper
1 whole head-on black bass or rainbow trout (1 1/2-2 pounds), cleaned, scored to the bone on both sides in 1" intervals
2 tablespoons low-salt chicken broth
1 lime, cut into thin rounds
Steamed jasmine rice
Special Equipment
A large bamboo steamer

Steps:

  • In a clay mortar, lightly pound garlic, cilantro stems, and chiles with a wooden pestle until a coarse paste forms. Add 2 tablespoons lime juice, fish sauce, sugar, and pepper; mix with a spoon to combine. (Alternatively, pulse in a mini-processor until a loose paste forms.) Set sauce aside.
  • Place fish on a plate that will fit inside the steamer with some wiggle room; pour reserved paste over. In a wide pot, add water to a depth of 1". Bring to a boil. Transfer fish on plate to steamer. Set steamer over pot and pour chicken broth over fish. Cover; steam fish until cooked through, 12-15 minutes.
  • Using 2 large spatulas, transfer fish to a serving platter. Spoon juices on plate in steamer over fish. Drizzle with lime juice, if desired. Garnish with lime slices and cilantro leaves. Serve with steamed rice.

CHILI AND LEMON CRUMBED WHITE FISH WITH COCONUT RICE

Chili and Lemon Crumbed White Fish With Coconut Rice image

This is super simple on the table in about 30Min's and tastes wonderful. You can use whatever is your favourite white fish, John Dory, Perch, Cod, Bream etc.. I made this with panko flakes ( A Japanese breadcrumb available at some supermarkets and most Asian supermarkets.) so am not sure how crispy it will come out with regular breadcrumbs.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

2 cups panko breadcrumbs, flakes
2 red chilies, sliced thinly
3 garlic cloves, crushed
2 teaspoons lemon rind, finely grated
60 g butter, melted
4 white fish fillets
1 tablespoon lemon juice (approx)
1 1/2 cups white rice (I used Jasmine)
1 cup water
400 ml coconut cream
1 teaspoon sugar
2 green onions, sliced thinly

Steps:

  • Pre-Heat oven to 200c.
  • Coconut Rice.
  • Start with the rice.
  • Rinse rice under cold water until water runs clear; drain.
  • Combine rice with water, cream and sugar in a saucepan, bring to the boil, stirring occasionally.
  • Reduce heat; simmer covered, 15-20 Min's or until rice is tender, stir from time to time to prevent rice from sticking to the bottom of the pan.
  • Remove from heat and stand covered for 5 Min's, stir in green onion, reserving a few to use as a garnish for the top.
  • For the Fish.
  • While rice is cooking combine panko flakes, chili, garlic, rind and butter in a bowl.
  • Place fish on an oiled tray or oven proof dish; Drizzle fish with lemon juice, pat crumb mixture onto fish.
  • Cook uncovered 10-15 Min's or until fish is cooked through, if using thin fillets that will cook quick so that the topping will not brown and crisp, just turn the grill on for a few minutes towards the end of cooking to brown.
  • My Fish cooked perfectly in 15 minutes and gave a wonderful brown crispy coating to the topping.
  • To serve: Place fish on plate serve rice on the side garnish rice with green onion.

Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling.
  • Use fresh, high-quality ingredients: The fresher your ingredients, the better your dish will taste. Look for fish that is firm and has a mild, briny smell. Avoid fish that is mushy or has a strong, fishy odor.
  • Cook the fish gently: White fish is delicate, so it's important to cook it gently to prevent it from becoming dry or tough. Bake or steam the fish until it is just cooked through, or until it flakes easily with a fork.
  • Make sure the crumb coating is crispy: The crumb coating on the fish should be crispy and golden brown. To achieve this, use a combination of breadcrumbs, flour, and butter. You can also add herbs and spices to the crumb coating for extra flavor.
  • Serve the fish with a flavorful sauce or garnish: A flavorful sauce or garnish can help to elevate the dish and make it more special. Try serving the fish with a lemon-herb sauce, a tomato-based sauce, or a simple sprinkling of fresh herbs.

Conclusion:

Chili and lemon crumbed white fish with coconut rice is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is tender and flaky, the crumb coating is crispy and flavorful, and the coconut rice is creamy and aromatic. This dish is sure to please everyone at the table.
