4 (8-inch) flour tortillas
1/2 cup shredded jack cheese
1 cup bean chili (leftover from Barbeque Bean Chili Dogs, recipe follows)
1/4 cup sour cream or salsa for serving
1 cup barbeque sauce
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
2 tablespoons chili seasoning
1 tablespoon packed brown sugar
1 tablespoon yellow mustard
4 all-beef hot dogs
4 hot dog buns
1/2 medium onion, chopped, for serving

Steps:

  • Heat a large skillet over medium-high heat.
  • Place 1 tortilla onto a clean work surface. Sprinkle with 2 tablespoons of the cheese. Top with 1/2 cup of the bean chili and sprinkle with 2 more tablespoons of the cheese. Put another flour tortilla on top and carefully place in the skillet. Cook for 3 minutes until tortilla is slightly browned and cheese starts to melt. Flip and cook for another 3 minutes on the other side. Repeat with remaining ingredients. Transfer quesadillas to a cutting board. Cut into wedges and serve with sour cream or salsa.
  • In a large saucepan over low heat stir together the barbeque sauce, beans, chili seasoning, brown sugar, and mustard. Bring to a boil and reduce heat to a simmer and cook for 10 to 12 minutes, stirring occasionally.
  • Meanwhile, set up grill or indoor grill pan for direct cooking over medium heat. When ready to start cooking oil the grate. Place hot dogs on the hot, oiled grill. Cook for 10 minutes or until heated through, turning occasionally. Toast buns on grill, if desired. Place hot dogs in buns and top with chili. Serve hot with chopped white onions.

1 tbsp. olive oil
1 medium yellow onion, chopped
1 lb. ground beef
8 6-inch corn tortillas
1 cup shredded Cheddar or Jack cheese
1 tomato, chopped

Steps:

  • Preheat the oven to 400°F. In a skillet, heat the oil over medium heat until simmering. Add the onions and cook for 5 to 7 minutes or until wilted. Add the beef to the skillet and cook for 7 to 10 minutes breaking the meat up with a wooden spoon until no longer pink, or until an internal temperature of 160°F has been reached. Remove the beef mixture from the skillet to a large bowl and let cool slightly. Add the Hidden Valley® Original Ranch® Sweet Chili Dressing to the beef mixture and stir until well coated. Place one tortilla on a parchment lined or oiled sheet pan. Spoon a fourth of the beef on top of the tortilla. Place another tortilla on top of that, then top with a fourth of the cheese and tomato. Repeat this three more times with the remaining ingredients. Bake the tortilla for 7 to 10 minutes or until the tortilla is crisp and the cheese is bubbly. Serve immediately. Drizzle with more Hidden Valley® Original Ranch® Sweet Chili if desired. Refrigerate any leftovers promptly in a shallow container. 1 medium onion, chopped
1/2 teaspoon salt
3/4 cup prepared chunky salsa (Pace or Old El Paso brands preferred)
1 (4 ounce) can chopped green chilies, drained
2 cups shredded cheddar cheese or 2 cups colby-monterey jack cheese
10 -12 medium flour tortillas (soft taco size)
vegetable oil cooking spray
additional cheese (for serving)

Steps:

  • Heat oven to 450*.

1 pound lean ground beef
½ cup diced red bell pepper
½ cup diced onion
2 cloves garlic, minced
1 (8 ounce) can tomato sauce
¼ cup water
2 tablespoons olive brine
1 teaspoon ground cumin
1 teaspoon dried oregano
salt and ground black pepper to taste
½ cup sliced pimento-stuffed green olives
3 tablespoons raisins
cooking spray
12 (8 inch) flour tortillas
1 cup shredded Mexican cheese blend

Steps:

  • Place diced potato in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.

8 9-inch flour tortillas
1 pound Monterey Jack cheese, grated
8 tablespoons purchased fresh tomato salsa

Steps:

  • Heat 3 tablespoons oil in heavy large skillet over medium heat. Add chilies. Cover and cook until chilies are soft, adding water by tablespoonfuls if chilies become too dark, stirring occasionally, about 10 minutes. Uncover. Add garlic; sauté 1 minute. Transfer to medium bowl. Stir in cilantro. Season chili mixture to taste with salt and pepper.
  • Heat 2 teaspoons oil in each of 2 heavy large skillets over medium-high heat. Add 1 tortilla to each skillet. Top each with 1/4 of cheese and 1/4 of chili mixture, then 2 tablespoons salsa.
