FRITO CHILI CHEESEBURGER RECIPE

Frito Chili Cheeseburger Recipe image

A beast of a burger, piled high with a zesty chili con carne recipe, grilled onions, Fritos, shredded cheese and a juicy beef patty.

Provided by Sommer Collier

Categories     Main Course

Time 2h30m

Number Of Ingredients 20

4 strips bacon (chopped)
1 pound beef chuck roast (or stew meat, cut into small chunks)
1 small onion (peeled and chopped)
2 cloves garlic (minced)
1 tablespoon chili powder
1 teaspoon ground chipotle chili
1 teaspoon cumin
1 teaspoon dried oregano
14 ounces kidney beans (drained)
14 ounces crushed tomatoes (or diced)
1 tsp. sugar
1/2 lime (juiced)
1 tablespoon masa (corn flour)
Salt and pepper
2 pounds ground chuck
seasoning salt
1 large red onion (sliced into rings)
1 bag Fritos corn chips
2 cups shredded cheddar
6 hamburger buns

Steps:

  • Place the chopped bacon in a medium sauce pot over medium heat. Brown the bacon, then add the chopped beef roast, onions, and garlic, and cook another 5-8 minutes until the beef is browned on all sides. Stir occasionally.
  • Add the spices and sugar to the pot, along with the canned tomatoes and beans. Add 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir and cover. Once the mixture comes to a boil, lower the heat and simmer for 1 1/2-2 hours, until the beef is very tender. (The smaller you chop the beef the faster this happens.) Once the meat is tender, add the masa and lime juice. Stir and allow the masa to thicken the chili for another 5 minutes. Salt and pepper to taste.
  • Once the chili is ready, Preheat the grill to high heat. Separate the ground beef and form into 6 patties that are just slightly larger than the buns. Sprinkle both sides generously with seasoning salt.
  • Grill the patties for 3-5 minutes per side. (I like mine a little pink, so three minutes per side is usually perfect.) Then grill the sliced onion rounds for 1-2 minutes per side.

CHILI CHEESEBURGERS

Chili Cheeseburgers image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 15

5 pounds ground beef
Salt and freshly ground black pepper
3 cloves garlic, minced
1/2 onion, finely diced
One 14.5-ounce can diced tomatoes
One 14.5-ounce can kidney beans, drained
One 6-ounce can tomato paste
2 tablespoons chili powder
2 teaspoons cumin
3 good-quality hamburger buns
1 cup grated sharp Cheddar
Thin Fries, recipe follows, for serving, optional
10 large russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Divide the ground beef in half and form 6 somewhat-thin patties out of one of the halves. Sprinkle with salt and pepper. Fry the patties over medium to medium-low heat in a large skillet, 3 to 4 minutes per side. Set aside.
  • In the same skillet over medium-high heat, add the rest of the ground beef, the garlic, onions and some salt and pepper and cook until browned. Drain off the grease and mix in the diced tomatoes, kidney beans, tomato paste, chili powder and cumin. Cook until nice and bubbly, about 20 minutes. Taste and adjust the seasoning.
  • Lay half of each bun on 6 plates (so each plate gets half a bun.). Lay 1 patty on each bun piece, then divide the cheese among the patties. Ladle the hot chili all over the patties. Serve with Thin Fries if desired.
  • Peel and rinse the potatoes, then cut them into sticks by cutting each potato into 4 or 5 vertical pieces, then cutting each piece into sticks. Put the potato sticks in a large bowl, cover with cold water and swish them around to get off the extra starch. Pour off the starchy water and add fresh water. Continue washing the potatoes until the water runs clear. Cover with water again and allow them to soak for 2 or 3 hours. (You can also stick them in the fridge and let them soak for up to 3 days.)
  • When you're ready to make the fries, drain off the water and lay the potatoes sticks on baking sheets lined with paper towels. Blot them with more paper towels to dry them.
  • Heat a few inches of oil in a heavy pot until a deep-fry thermometer registers 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, about 1 minute per batch. They should not be brown at all at this point! You just want to start the cooking process. Remove each batch and drain them on new/dry paper towels.
  • When all the potatoes have been fried once, turn up the heat until the oil reaches 400 degrees F. Start frying the potatoes in batches again, cooking until the fries are golden and crisp, 1 to 2 minutes. Remove from the oil and drain on paper towels.
  • Sprinkle the fries with sea salt and dive in!

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h5m

Yield 6 servings

Number Of Ingredients 24

2 tablespoons vegetable oil
2 pounds ground beef (chuck for a more buttery flavored beef chili, sirloin for lean steak-like flavor)
3 tablespoons chili powder such as Gebhardt's Chili Powder, or ancho chile powder
Salt and freshly ground black pepper
3 to 4 cloves garlic, finely chopped
2 onions, finely chopped
2 cups beef stock
1/2 cup organic ketchup, such as Heinz
1/4 cup Worcestershire sauce
1/4 cup yellow mustard, such as Ploughman's or French's
One 14-ounce can red kidney beans, drained
3 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
Salt and freshly ground black pepper
2 cups shredded mild yellow Cheddar
1/4 cup dill pickle relish
1/2 small white or yellow onion, finely chopped (1/4 to 1/3 cup)
Easy Oven Fries, recipe follows
Ripple potato chips
Chopped raw onions
3 large starchy potatoes, scrubbed and dried
Olive oil cooking spray
Kosher salt and coarse black pepper

Steps:

  • For the chili: Heat the oil in a large pot or Dutch oven over medium-high heat. Pat the meat dry and add to the hot oil. Brown and crumble the meat until it is evenly caramelized. Add the chili powder and some salt and pepper. Stir. Add the garlic and onions; cook to soften, 7 to 8 minutes. Then add the beef stock, ketchup, Worcestershire, mustard and hot sauce, to taste. Stir in the beans and reduce the heat to keep the chili at a simmer. Cook to thicken, partially covered, about 20 minutes. Cool and store for a make-ahead meal. Reheat over medium heat. Stir frequently. For the cheeseburger sauce: Melt the butter in a sauce pot over medium heat. Whisk in the flour, cook 1 minute, then add the milk. Season the sauce with salt and pepper and thicken to coat back of spoon. Stir in the cheese in a figure-eight motion. Once the cheese has melted, stir in the relish and raw onions, taste the sauce for seasoning. Cool and store. Reheat over medium-low heat, partially covered, stirring frequently. Alternatively, reheat in a microwave oven, partially covered, stirring occasionally until evenly hot through, 2 1/2 to 3 minutes on high. Serve the chili in shallow bowls, topped with Easy Oven Fries or chips, cheese sauce and onions.
  • While the chili and sauce are heating up, preheat the oven to 450 degrees F. Place the oven rack in center of the oven. Cut the potatoes into planks lengthwise, then into thin sticks. Arrange the fries on a large baking sheet and spray evenly with cooking spray. Season the potatoes with salt and pepper. Bake 10 to 12 minutes. Then switch the broiler to high and cook until crisp, 10 to 15 minutes more, turning once.

CHILI CHEESEBURGERS

Categories     main-dish

Time 15m

Yield 6 servings

Number Of Ingredients 17

2 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
3 good-quality hamburger buns
1 cup grated sharp Cheddar
4 cups chili, recipe follows, heated
4 pounds ground beef
6 cloves garlic, minced
Two 8-ounce cans tomato sauce
One 6-ounce can tomato paste
1/4 cup chili powder, or more as desired
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper, or more as desired
Two 15-ounce cans kidney beans, drained and rinsed
Two 15-ounce cans pinto beans, drained and rinsed
1/2 cup masa harina (corn flour) or regular cornmeal

Steps:

  • Form 6 somewhat-thin patties from the beef and sprinkle with salt and pepper. Fry the patties over medium to medium-low heat in a large skillet, 3 to 4 minutes per side.
  • Onto each half of a burger bun, place a cooked patty. Top with 2 to 3 tablespoons grated Cheddar and a pile of hot chili.
  • In a large, heavy pot, brown the ground beef with the garlic over medium heat until the beef is totally cooked, 8 to 10 minutes. Drain off most of the excess fat, leaving a little behind for moisture and flavor. Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally; if the liquid level seems low, add up to 1 cup water to keep it from burning.
  • After an hour, stir in the kidney and pinto beans. In a small bowl, combine the masa harina with 1/2 cup water and stir together with a fork until it's smooth. Pour the masa mixture into the chili. Stir together well, then taste the chili and adjust the seasonings. Simmer the chili for another 10 minutes to thicken, then turn off the heat and let it cool.
  • Fill freezer bags with 2-cup portions and freeze them flat for easy stacking (or freeze in other freezer-safe containers).

Provided by Claire Nolan

Categories     Dinner

Yield 8 servings

Number Of Ingredients 19

2 tablespoons olive oil
1 cup white onion, chopped
2 cloves garlic, finely chopped
1 lb ground beef
14.5 oz crushed tomato
6 oz tomato paste
1 tablespoon light brown sugar, packed
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon paprika
1 tablespoon chili powder
1 teaspoon ground cumin
½ cup water
2 ⅔ cups grated parmesan cheese
2 lb ground beef, divided into 8 patties
salt, to taste
pepper, to taste
1 cup shredded cheddar cheese
8 brioche burger buns

Steps:

  • Heat the olive oil in a large pot with a lid over medium heat until shimmering. Add the onion and garlic and sauté for 2 minutes, until translucent.
  • Add the ground beef and cook until browned, about 7-10 minutes.
  • Add the crushed tomatoes, tomato paste, brown sugar, salt, ground pepper, paprika, chili powder, ground cumin, and stir to combine. Add water and stir. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
  • Set a wire cooling rack on top of a baking sheet. Place a metal 1-cup (240 ml) measuring cup upside down on top of the cooling rack.
  • In a medium non-stick skillet over medium heat, pour ⅓ cup (35 g) of Parmesan in the center of the pan and spread out into a thin circle, about 5 inches across. Without disturbing the cheese, melt for 2-3 minutes, or until golden and fully melted.
  • Once the cheese is fully melted, run a spatula along the edges of the cheese and shake the pan to loosen the cheese circle. Carefully slide the melted cheese over the inverted measuring cup to form a cheese bowl. DO NOT TOUCH, it is extremely hot. Set aside and let cool completely, about ten minutes. Repeat with the rest of the Parmesan to make 8 bowls.
  • Lightly grease a large skillet over high heat, then add the beef patties (in batches, if necessary) and season generously with salt and pepper. Cook for 2 minutes without disturbing, then flip and cook for another 3 minutes, or until the internal temperature has reached at least 165˚F (75˚C).
  • To assemble, place a bottom burger bun on a plate and put a cheese bowl on top. Lay a burger patty inside the cheese bowl and top with a spoonful of chili, a sprinkle of shredded cheddar cheese, and the top bun.

GREEN CHILE CHEESEBURGER DELUXE

Green Chile Cheeseburger Deluxe image

In New Mexico, where many traditional dishes contain roasted green chiles, it's only natural that hamburgers get the chile treatment, too. If you don't have access to fresh New Mexican green chiles, try fresh Anaheim chiles. Lacking those, use roasted jalapeños that have been peeled and chopped; thinly sliced raw jalapeños; or pickled jalapeños - a compromise perhaps, but better than no chiles at all. As for cheese, any good melting kind of "queso amarillo" will do, but domestic Monterey Jack or Muenster may be even better.

Provided by David Tanis

Categories     dinner, lunch, burgers, main course

Time 1h

Yield 4 servings

Number Of Ingredients 11

1 medium white onion, diced small, soaked in ice water 10 minutes and drained
2 medium firm-ripe tomatoes or 6 plum tomatoes, diced
Salt, to taste
1 Serrano chile, finely chopped
Handful of chopped cilantro
4 to 6 fresh New Mexico green or Anaheim chiles
24 ounces ground beef or ground buffalo meat
Salt and pepper
8 slices Monterey Jack or Muenster
4 hamburger buns, lightly toasted
1 or 2 avocados, in thick slices

Steps:

  • Make the salsa: In a medium bowl, mix together onion, tomato, salt, Serrano chile and cilantro. This salsa tastes best when it's fresh, so don't set aside for too long.
  • Prepare a charcoal barbecue or light the broiler. When hot, roast the chiles.
  • Place chiles on a rack very close to the glowing coals, or on a baking sheet quite close to broiler flames. Using tongs, turn chiles occasionally until they are completely black and blistered all over. Alternatively, roast over stovetop flames. Set roasted chiles aside for a few minutes until cool enough to handle.
  • Cut each chile in half lengthwise, then scrape away skins and seeds with a pairing knife. Do not rinse: A few bits of char are fine. Wipe chile "fillets" with a paper towel if you wish. Slice cleaned chiles lengthwise into 1/2-inch strips and set aside. (It's fine to roast chiles in advance, even a day or two ahead.)
  • Divide ground meat into 6-ounce balls, and press them into 3/4-inch-thick patties. Season patties on both sides with salt and pepper.
  • If grilling over coals, cook burgers over brisk heat, about 3 minutes per side for medium-rare. Add sliced cheese when the burger's juices start appearing. Move burgers to a cooler spot on the grill and let cheese continue to melt.
  • If cooking on stovetop, heat a cast-iron pan or ridged grill pan over high heat. When hot, cook burgers over brisk heat, about 3 minutes per side for medium-rare. Add sliced cheese when the burger juices start appearing. Turn off heat and let cheese continue to melt, or place pan under broiler.
  • Place a cheeseburger on the bottom half of each bun. Adorn each burger generously with strips of roasted chile. Top the burgers with buns and serve immediately, accompanied by avocado slices and tomato salsa.
