This white chicken chili recipe is adapted from a Betty Crocker slow cooker recipes cookbook. I often use frozen chicken breasts, and it can also be prepared conventionally on the stove top. Great comfort food!

1 1/4 lbs boneless skinless chicken
2 (15 ounce) cans great northern beans or 2 (15 ounce) cans navy beans
1 (15 ounce) can hominy or 1 (15 ounce) can white corn
1 (1 1/4 ounce) envelope taco seasoning
1 (4 1/2 ounce) can of chopped green chilies
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (14 ounce) can chicken broth
1/2 cup sour cream
chopped green onion (optional)
monterey jack cheese (optional)

Steps:

  • Place chicken in a 4 quart slow cooker.
  • Top with beans and corn.
  • In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.
  • Cover and cook on low for 8 to 10 hours.
  • Before serving, stir gently to break up chicken, then stir in the sour cream.
  • Serve topped with green onions and jack cheese, if desired.

My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

2 (28-ounce) cans whole tomatoes, coarsely chopped with their juices
1/3 cup chopped fresh cilantro, plus more for serving
1 (12-ounce) bottle amber beer
2 (15-ounce) cans kidney beans, drained and rinsed
Tortilla chips, for serving
Shredded cheddar cheese, for serving
Chopped tomatoes, for serving
Sour cream, for serving
Lime wedges, for serving

Steps:

  • In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Working in batches if necessary, add beef and cook until no longer pink, about 3 minutes. Season with salt and pepper; drain in a colander, discarding fat, and set aside.
  • Add remaining tablespoon olive oil to skillet and reduce heat to medium. Add onions, garlic, and habanero; season with salt. Cook until translucent, about 5 minutes.
  • In a 6-quart Crock-Pot, combine beef, onion mixture, chile powder, oregano, cumin, and cayenne pepper; stir to combine. Add tomatoes, cilantro, and beer; cover and cook on high, stirring occasionally, for 5 hours.

1 medium yellow onion, chopped

4 lbs ground beef
4 (1 lb) cans canned kidney beans
28 ounces canned crushed tomatoes (Hunts has them spiced for chili)
12 ounces tomato paste
2 onions, finely chopped
4 ounces chili powder
4 ounces cayenne pepper (dry powder)
2 (10 ounce) cans beef broth
2 fresh tomatoes
2 jalapeno peppers or 2 serrano peppers
3 garlic cloves
1 tablespoon ground cumin
1 tablespoon oregano
1 1/2 tablespoons paprika

Steps:

  • Fry the bacon until it starts to brown, then put it into the crock pot.
  • In the bacon drippings, brown the ground beef.
  • Put the ground beef, beans, crushed tomatoes, tomato paste, onions, chili powder (In Southern California we have a great variety available, but Gebhardt's would work), and the cayenne into the crock pot with the beef broth.
  • Cut the stems off the fresh jalapenos and cut them in two or three chunks.
  • place the peppers along with the garlic and whole fresh tomatoes into a food processor and puree the three ingredients.
  • Put this into the crock pot, stir to mix and let it all cook for 10-12 hours on low or 5-6 hours on high.
  • By making a puree out to of the peppers and garlic, you get a more evenly dispersed blend.
  • I used the tomatoes to give some moisture to the puree.
  • Serrano chilies are three times hotter than jalapenos so don't let their small size fool you.

2 (10 ounce) cans ro*tel diced tomatoes and green chilies
1 (10 ounce) can hormel chili
2 cups shredded mexican cheese

  • Cut Velveeta into 2 inch cubes. Place cubes into crock pot with the Ro*tel, chili and shredded cheese. Mix together. Turn crock pot on Low setting and cover, stirring occasionally. When all cheese is completely melted, it's time to enjoy!
  • (It usually takes an hour and a half or so on Low temp, but if you need it quicker, use High temp, but watch it and stir often to prevent burning).

3 lbs beef stew meat
1/2 cup water
1 onion, chopped
1 tablespoon garlic, minced
3 (8 ounce) cans kidney beans
1 (14 ounce) can stewed tomatoes
1 (14 ounce) can diced tomatoes
1 (14 ounce) can enchilada sauce
1 (14 ounce) can beef broth
1/2 cup cornmeal

Steps:

  • Place meat and onions at bottom of crock pot.
  • Add all remaining ingredients except.
  • for kidney beans. I like to add that.
  • at the very end of cooking time.
  • Place on high for 4hours or low for 6hours.
  • Usual toppings: cheese & cilantro.
  • over rice.

2 tablespoons olive oil
1 medium yellow onion, peeled and chopped
1 medium red onion, peeled and chopped
2 garlic cloves, peeled and minced
2 lbs ground turkey (not ground turkey breast, too dry!)
1 (14 1/2 ounce) can diced tomatoes, undrained
2 (15 1/4 ounce) cans kidney beans, undrained
1 (29 ounce) can tomato sauce
1/2 teaspoon liquid smoke
1/4 teaspoon dried thyme
1/3 cup mild chili powder
1 tablespoon ground cumin
1 large dried New Mexico chile, crumbled
1 teaspoon hot red chili pepper flakes

Steps:

  • Heat 1 tbs. oil in skillet. Saute onions and garlic until soft, and slightly browned. Put into crock pot.
  • Heat remaining oil and brown ground turkey (I use ground dark meat, not as dry as breast meat when cooked). Put meat into crock pot.
  • Add remaining ingredients to crock pot and stir together.
  • Cover and cook on high for 4-6 hours.
  • Serve in large bowls, with cornbread on side.
  • Optional toppings at table: Diced red or sweet yellow onion. Shredded cheddar or pepper jack cheese. Sour cream.
