CHILE-LIME PEANUTS

Chile-Lime Peanuts image

A traditional Oaxacan bar snack, these lime- and chile-flavored peanuts are typically deep-fried in pork fat. The folks at Chow lightened them up by roasting them in the oven for a quick and easy snack without sacrificing any flavor. Try them out at your next cocktail party, and don't be put off by the amount of garlic-roasting sweetens and mellows it.

SOUTHWESTERN-STYLE LIME CHILI

Southwestern-Style Lime Chili image

I came up with this recipe the first week of October, when I was participating in a chili cook-off in Mountain Home, ID. Came out great and every judge and taster enjoyed it. It will have the authentic chili flavor with a little 'twist.' This recipe should be started the night before you wish to serve it.

2 tablespoons minced garlic
2 pounds sirloin roast, cut into 1/2-inch cubes
3 (15 ounce) cans chili beans
2 (15 ounce) cans diced tomatoes
2 (8 ounce) cans tomato sauce

Tips:

  • Use fresh ingredients: Fresh peanuts, limes, and cilantro will give your chili lime peanuts the best flavor.
  • Don't overcook the peanuts: Overcooked peanuts will be tough and chewy. Cook them just until they are golden brown and fragrant.
  • Use a good quality chili powder: The chili powder is what gives these peanuts their spicy kick. Use a chili powder that you like the taste of and that has a good amount of heat.
  • Add salt to taste: Salt is essential for bringing out the flavor of the other ingredients. Add salt to taste until the peanuts are as salty as you like them.
  • Serve immediately: Chili lime peanuts are best served immediately after they are made. They will lose their crunch if they sit for too long.

Conclusion:

Chili lime peanuts are a delicious and easy-to-make snack that is perfect for parties, potlucks, or just a quick snack. They are also a great way to use up leftover peanuts. With just a few simple ingredients, you can make a batch of chili lime peanuts that will be sure to please everyone. So next time you are looking for a tasty snack, give chili lime peanuts a try!
