1 large egg
3 tablespoons whole milk
1 tablespoon chili powder
1/2 teaspoon salt
1-1/2 pounds lean ground beef
TOPPING:
3 cups hot mashed potatoes (with milk and butter)
1 can (11 ounces) Mexicorn, drained
1 can (16 ounces) kidney beans, rinsed and drained
1/4 cup thinly sliced green onions
1 cup shredded cheddar or Mexican cheese blend, divided

Steps:

  • Combine the first six ingredients; crumble beef over mixture and mix well. Press into an ungreased 9-in. square baking pan. Bake at 375° for 25 minutes or until a thermometer reaches 160°; drain. , Combine the potatoes, corn, beans, onions and 1/2 cup of cheese; spread over meat loaf. Sprinkle with the remaining cheese. Bake 15 minutes longer or until the potato layer is lightly browned and heated through.

3/4 cup onion, finely chopped
1/3 cup saltine crumbs
3 tablespoons milk
1 tablespoon chili powder
3/4 teaspoon salt
3 cups prepared mashed potatoes
1 (11 ounce) can whole kernel corn, drained (with red and green peppers)
1/4 cup green onion, thinly sliced
1/2-1 cup taco blend cheese, shredded

Steps:

  • Heat oven to 375 degrees.
  • In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly; gently press into bottom of 9-inch square baking pan.
  • Bake 20 to 25 minutes or until center is no longer pink.

1 Package Ore-Ida® Steam n' Mash Cut Russet Potatoes
2/3 Cup Canned Evaporated Milk
1 Tablespoon Butter
1 Tablespoon Chopped Fresh Flat-Leaf Parsley

1 Cup Cooked Bacon Crumbles
1/4 Cup Canned Crispy Fried Onions

1 1/2 pounds ground sirloin
1 1/2 pounds ground pork
2 small onions, finely chopped
6 garlic cloves, minced

1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten

  • Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds.
