Tips:

  • To achieve crispy chicken legs, make sure the oil is hot enough before frying. You can check this by dipping a wooden spoon into the oil; if it bubbles immediately, the oil is ready.
  • Another way to ensure crispy chicken legs is to double fry them. After the first fry, let the chicken legs rest on a wire rack for a few minutes before frying them again.
  • To make the chicken legs more flavorful, marinate them in a mixture of soy sauce, rice wine, ginger, and garlic for at least 30 minutes before cooking.
  • If you don't have time to marinate the chicken legs, you can still add flavor by rubbing them with a mixture of salt, pepper, and paprika before frying.
  • Serve the chicken legs with a dipping sauce of your choice, such as sweet and sour sauce, plum sauce, or hoisin sauce.
