Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

4 cups chicken broth
3 tablespoons cornstarch
2 eggs, lightly beaten
1 teaspoon rice wine vinegar
1 1/2 cups frozen peas, thawed

Steps:

  • In a large saucepan bring broth to a boil over medium heat.
  • Whisk cornstarch and 1/4 cup water in a small cup until smooth; and then whisk mixture into broth. Simmer until soup thickens (2-5 minutes). Reduce heat.
  • Drizzle eggs into soup while stirring quickly and cook for one mintute and then stir in vinegar.
  • Heat peas according to package directions and then divide into 4 bowls. Ladle soup over the peas.

Tips:

  • Use fresh eggs: Fresh eggs will give your soup a richer flavor and a more vibrant color.
  • Beat the eggs thoroughly: Beating the eggs thoroughly will help them to distribute evenly throughout the soup and prevent them from curdling.
  • Add the eggs slowly: Slowly drizzle the beaten eggs into the simmering soup, stirring constantly. This will help to prevent them from curdling.
  • Don't overcook the eggs: Once the eggs have been added to the soup, cook for just a minute or two, or until they are just set. Overcooking the eggs will make them tough and rubbery.
  • Season to taste: Season the soup with salt, pepper, and other seasonings to taste. You can also add a splash of soy sauce or rice vinegar for extra flavor.
  • Garnish with green onions: Garnish the soup with chopped green onions before serving for a pop of color and flavor.
