1lb boneless skinless chicken breasts (cut into 1-inch cubes)
¼ cup cornstarch
4 cups vegetable oil + 2 teaspoons vegetable oil
½ teaspoon chopped garlic
1 teaspoon of rice wine
2 tablespoons soy sauce
2 jalapeno peppers (sliced)
2 tablespoons sugar

Steps:

  • In a sealable plastic bowl or bag combine the chicken and cornstarch shake well until the chicken is evenly coated. Allow standing for 5 minutes.
  • Heat 4 cups of vegetable oil in a deep fryer to 375 degrees. Add the chicken and deep fry in batches until the chicken is crispy and fully cooked (the internal temperature has reached 165 degrees). Drain on paper towels.

2/3 cup lemon juice, divided

The original recipe actually called for 1 tsp salt in step number 2, but we left it out.

1/2 cup fresh oregano
1 shallot
4 garlic cloves
2 tablespoons unsalted butter
4 tablespoons olive oil
1 jalapeno pepper, stemmed and seeded
1/2 teaspoon pepper
1 (5 1/2 lb) whole chickens
1 1/2 cups chicken broth
3/4 cup dry white wine

Steps:

  • Preheat oven to 400.
  • Combine oregano, shallot, garlic, butter, olive oil, the jalapeno and pepper in a food processor and mix until until it's a paste.
  • Pat the chicken dry and place breast-side up on a rack in a large roasting pan.
