CHINESE GROUND PORK AND ASPARAGUS

Number Of Ingredients 11

3 tablespoons Soy sauce
1 tablespoon Dry sherry
2 teaspoons Cornstarch
1 pound Pork (ground)
3 tablespoons Sesame oil
1 bunch Aspargus (trimmed to 1/2" to 3/4" pieces)
1 Jalapeno (red or green)
1 tablespoon Ginger (minced)
2 tablespoons Oyster sauce
1 teaspoon Honey
2 Green onions (thinly sliced)

Steps:

  • Whisk 1 tablespoon soy sauce, rice wine, and cornstarch in medium bowl. Add pork; toss to blend. Heat 2 teaspoons oil in heavy large wok or deep skillet over high heat. Add asparagus, chile, and ginger. Toss until asparagus is crisp-tender, about 3 minutes. Using slotted spoon, transfer asparagus mixture to plate.
  • Add remaining 1 teaspoon oil to wok. Add pork mixture and stir-fry until browned, using spoon to break up pork into small pieces, 2 to 3 minutes. Return asparagus mixture to wok. Add remaining 2 tablespoons soy sauce, oyster sauce, and honey; stir-fry until pork is cooked through, adding water by tablespoonfuls if dry, about 2 minutes.
  • Add green onions; toss to incorporate. Season to taste with sea salt and freshly ground black pepper.

Tips:

  • Choose the right asparagus: Look for asparagus that is firm and has tight, closed tips. Avoid asparagus that is wilted or has brown or yellow tips.
  • Trim the asparagus properly: Cut off the woody ends of the asparagus, about 1 inch from the bottom.
  • Cook the asparagus quickly: Asparagus cooks quickly, so don't overcook it. Stir-frying is a great way to cook asparagus because it cooks the asparagus quickly and evenly.
  • Use a good quality pork: Pork tenderloin is a good choice for this recipe because it is lean and tender. You can also use pork loin or pork chops.
  • Marinate the pork: Marinating the pork in a mixture of soy sauce, rice wine, and ginger helps to tenderize the pork and add flavor.
  • Use a hot wok or skillet: A hot wok or skillet is essential for stir-frying. The high heat helps to sear the meat and vegetables and prevents them from sticking to the pan.
  • Stir-fry in batches: If you are cooking a large amount of food, stir-fry it in batches. This will help to prevent the food from becoming crowded in the pan and ensure that it cooks evenly.
  • Serve immediately: Stir-fried asparagus and pork is best served immediately, while it is still hot and crispy.

Conclusion:

This recipe for Chinese Pork and Asparagus is a delicious and easy-to-make dish that is perfect for a weeknight meal. The asparagus and pork are cooked quickly in a hot wok or skillet, and the sauce is simple but flavorful. Serve this dish with rice or noodles, and you have a complete meal that the whole family will enjoy.
