They combine flour tortillas filled with breaded, fried tilapia, layered with chipotle mayo, topped with napa cabbage, dressed with honey-cumin sauce, and served with pico de gallo, sour cream, chips and salsa. You'll find them very refreshing and packed full of flavor!

1 pound tilapia fillets, cut into chunks
½ cup fresh lime juice
⅓ cup fresh lime juice
2 tablespoons honey
1 tablespoon vegetable oil
1 teaspoon ground cumin
½ cup mayonnaise
2 chipotle chilies in adobo sauce
1 tablespoon adobo sauce from chipotle peppers
¼ teaspoon salt
⅛ teaspoon cayenne pepper
⅓ cup all-purpose flour
2 eggs, lightly beaten
2 cups panko crumbs
salt and ground black pepper to taste
1 cup vegetable oil for frying
2 cups 3 color coleslaw blend
1 cup minced fresh cilantro leaves
8 (7 inch) flour tortillas, warmed

Steps:

  • Place the tilapia chunks in a flat dish and pour 1/2 cup lime juice over the fish. Cover, and refrigerate at least 4 hours.
  • Meanwhile, make the honey-cumin sauce by whisking together 1/3 cup lime juice, honey, vegetable oil, and ground cumin a small bowl. Set aside until needed.
  • To make the chipotle mayonnaise dressing, place the mayonnaise, chilies, adobo sauce, 1/4 teaspoon salt, and cayenne pepper together in the bowl of a food processor. Pulse until smooth. Cover, and refrigerate until needed.
  • To bread the fish, place the flour, eggs, and panko crumbs in three separate shallow dishes. Season the fish with salt and pepper to taste. Dip the fish pieces first in the four, coating evenly, and shaking off any excess. Dip next in the eggs, and last in the panko crumbs, patting the pieces to help the breadcrumbs hold. Set the fish aside on a plate.
  • To cook the breaded fish, pour 1 cup vegetable oil into a skillet to 1/4 inch deep. Heat the oil to 365 degrees F (185 degrees C) over medium heat. Cook the fish, turning until all sides are golden brown, and flesh is easily flaked with a fork. Drain on paper towels. Brush the fish with the honey-cumin sauce.
  • Mix the coleslaw and cilantro together in a bowl. Reserve 1/4 cup of the chipotle mayonnaise dressing, and pour the remaining dressing over the coleslaw mixture. Toss to coat evenly with the dressing.
  • Place the tortillas on a flat surface, and spread each with 1 tablespoon reserved chipotle mayonnaise dressing. Divide the fish between the tortillas. Top with the cilantro coleslaw.

1/2 cup mayonnaise
1 teaspoon chipotle in adobo sauce
4 cups cornflakes (about 3.9 ounces or 110 grams)
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2/3 cup panko
1 tablespoon garlic salt
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 large eggs
4 small boneless, skinless chicken thighs (about 14 ounces or 397 grams total)
1/3 cup olive oil
8 slices white bread, crusts removed, lightly toasted
2 1/2 ounces iceberg lettuce, cut into shreds (about 1 cup)
12 bread-and-butter pickle chips

Steps:

  • Mix the mayonnaise and chipotle in adobo sauce in a small bowl until well combined. Refrigerate until ready to use.
  • Place the cornflakes in a large resealable plastic bag and use the back of a measuring cup to pound them into fine crumbs. Set up a standard breading station with three wide, deep plates (or pie plates). Mix the flour and 1 teaspoon salt in one plate. Place one chicken thigh between two pieces of plastic wrap and use the back of a measuring cup or a meat mallet to pound the thigh about 1/4-inch thick. Place on the wire rack and repeat with the remaining chicken thighs.
  • Using one hand for dry things and one hand for wet things, dredge one piece of chicken at a time in the flour, tapping off any excess. Dip into the eggs, then press into the cornflake mixture until evenly coated all over. Place back on the wire rack and repeat with the remaining three pieces.
  • Heat the olive oil in a large skillet over medium-high heat. Working in batches, add two pieces of chicken to the skillet and cook, flipping halfway through, until the crust is a deep golden brown and the chicken is cooked through, 2 to 3 minutes per side. Transfer to the paper towel-lined baking sheet and repeat with the remaining two pieces of chicken, making sure the oil stays hot.
  • To assemble the sandwiches, spread about 1 tablespoon of the chipotle mayonnaise on one side of each piece of toast. Top 4 pieces with the lettuce, then top with three pickles. 2 eggs, lightly beaten

2 tablespoons fresh cilantro, minced
chipotle mayonnaise
1 cup mayonnaise
1 tablespoon lime juice

  • Put chicken in saucepan and cover with water. Bring to a boil, cover and then simmer 12-15 minutes or until no longer pink. Drain, cool, chop. You will need about 3 cups.

Cook the fish, turning until all sides are golden brown, and flesh is easily flaked with a fork. Drain on paper towels. Brush the fish with the honey-cumin sauce. ■12 ounces fresh ground sirloin
■1/4 onion, sliced
■2 slices bacon
■1/2 teaspoon fresh basil, chopped
■1/2 teaspoon fresh oregano, chopped
■1/2 teaspoon fresh cilantro, chopped
■1/2 teaspoon canola oil
■2 tablespoons poblano chile, chopped
■salt and fresh ground black pepper
■12 fresh baked dinner rolls or small sandwich buns
Chipotle Mayo
■1 chipotle chile in adobo, minced
■1 cup mayonnaise
■1 tablespoon fresh cilantro, chopped
■1 teaspoon smoked paprika
■2 cloves garlic, minced
■2 tablespoons lemon juice
■1 tabelsoon of my Angel Dust seasoning

Steps:

  • Saute the bacon and onion over medium high heat until bacon is crisp and onions are caramelized. Remove from pan and chop both finely. In a bowl combine the meat, bacon, caramelized onion and pablanos. Season with salt, pepper and the three herbs. Form into small patties. Cook over medium high heat for 2 -4 minutes per side for medium rare. For chipotle mayo, in a bowl combine all ingredients and mix. Build the the little suckers, serve with chili cheese fries (of course) and gobble them down.

1/2 Tbsp chipotle purée
3 Tbsp mayonnaise
6 slice breads, toasted, buttered and divided
4 slice cooked turkey
6 slice bacon, cooked
4 slice tomato, washed
freshly ground black pepper, to taste (i always use mixed peppercorns)
ground himalayan sea salt, to taste
4 slice processed cheese such as velveeta®
6 slice black forest ham
4 slice jarlsberg cheese
a few butter lettuce leaves, washed
4 large toothpicks

Steps:

  • 1. In a small bowl, combine chipotle purée and mayo; stir, taste and adjust if needed. Spread a thin layer of chipotle mayo on one slice of bread and cover with 2 slices turkey then 1 ½ slices of bacon followed by a couple slices of tomato; season with freshly ground black pepper and ground sea salt. Lay 2 slices processed cheese before placing another toasted slice spread with chipotle mayo; gently press down.
  • 2. Add 3 slices ham, another 1 ½ slices bacon, a couple Jarlsberg cheese and cover with lettuce. Place the top toasted slice of bread spread with chipotle mayo. Press down again, carefully slice the sandwich diagonally and secure each half with a toothpick. Repeat with the second sandwich.

Olive oil-flavored cooking spray
2 teaspoons Creole seasoning
1 cup mayonnaise
1/4 cup Dijon mustard
1 to 2 chipotle peppers in adobo sauce, seeded
2 tablespoons white wine vinegar
1 tablespoon minced garlic
8 hard-cooked eggs, coarsely chopped
2/3 cup chopped sweet onion
6 bacon strips, cooked and crumbled

Steps:

  • Place potatoes in a greased 15x10x1-in. baking pan. Spritz with cooking spray; sprinkle with Creole seasoning. Bake, uncovered, at 425° for 45-50 minutes or until golden brown and tender, stirring occasionally.
