12 ounces short pasta, such as mezzi rigatoni, cavatappi, or gemelli
1/4 cup extra-virgin olive oil
1 head fennel, thinly sliced (1 1/2 cups), fronds reserved

Shrimp Pasta with Creamy Chipotle Sauce Recipe - (4.1/5) image

Provided by Storie

Number Of Ingredients 15

8 ounces dried pasta, linguine, fettuccine, etc.
1 tablespoon vegetable oil
1 small onion, chopped
2 garlic cloves, peeled and minced
1 small bell pepper, cored, seeded, and sliced
1/2 teaspoon ground cumin
4 to 5 small fresh plum tomatoes or 10 cherry tomatoes, stem ends and seeds removed and sliced
2 to 3 canned chipotle peppers
1 teaspoon adobo sauce
1 pound peeled large shrimp
2 teaspoons fresh lemon juice
1 1/2 cups half-and-half, light cream, or evaporated milk
1/4 cup chopped fresh cilantro
Salt and pepper, to taste
1/3 cup grated Parmesan cheese, optional

Steps:

  • Boil the pasta in a large sauce pan until al dente, according to the package instructions. Drain and set aside. Heat the oil in a Dutch oven or large frying pan on medium heat and, stirring occasionally, sauté the onions for 2 minutes or until wilted. Stir in the garlic, bell peppers, tomatoes, and cumin. Sauté for an additional 2 minutes. Reduce the heat to medium-low and stir in the chipotles, shrimps, lemon juice, and half-and-half (or cream or evaporated milk). Simmer until the shrimps are just cooked through, approximately 3 to 5 minutes, depending on the size of shrimps used. Stir in the cilantro. Taste and correct the seasoning by adding salt, pepper, and, if needed, additional chipotle to suit your taste. Return the pasta to the sauce pan in which it was cooked, sprinkle with the grated cheese (if used), and pour the shrimp sauce over it. Toss until well blended and transfer to a serving dish. SHRIMP AND TOMATO PASTA

Shrimp and Tomato Pasta image

Frozen shrimp is a freezer staple that can be counted on to save dinner any night - simply thaw to use them whenever needed. Here, shrimp and spaghetti are tossed with juicy cherry tomatoes, which are gently simmered until they burst and turn saucy. This dish is best with ripe, in-season cherry tomatoes, but the aromatic fennel seeds and garlic infused in the oil will coax maximum flavor out of less enthusiastic tomatoes while adding depth to the sauce.

Categories     dinner, easy, quick, weeknight, pastas, main course

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 10

8 tablespoons extra-virgin olive oil
1 pound peeled and deveined frozen shrimp (16/20-count), thawed and cut into thirds
Kosher salt (Diamond Crystal)
3 large garlic cloves, gently smashed with the flat side of a knife
1 teaspoon fennel seeds
1/4 teaspoon red-pepper flakes, or to taste
2 pounds cherry tomatoes, larger ones halved, small ones kept whole
1 pound spaghetti
Handful of basil leaves, torn
Black pepper

Steps:

  • In a large skillet, heat 2 tablespoons oil over medium. Add the shrimp, season with 1 teaspoon salt and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer the shrimp to a dish and set aside. Discard any excess liquid in the pan.
  • Add the remaining 6 tablespoons oil and the garlic cloves to the same pan and cook over medium-low, turning the garlic a couple of times until light gold and fragrant, taking care not to burn them, about 4 minutes. Add the fennel seeds and red-pepper flakes, stir and cook until fragrant, about 1 minute. Increase the heat to medium and add the cherry tomatoes and 1 1/2 teaspoons salt.
  • Cook the tomatoes, stirring occasionally, until they release their juices and get saucy, 25 to 30 minutes. While the tomatoes cook, bring a large pot of well-salted water to a boil for the pasta. Add the spaghetti and cook until al dente, about 10 minutes.
  • Transfer the shrimp with any juices to the tomatoes to reheat for a couple of minutes. Taste the sauce and adjust seasoning.
  • Set the pasta pot next to the saucepan and use tongs to transfer the spaghetti to the tomatoes and shrimp. The starchy water clinging to the spaghetti will make for a tasty and silky sauce. (You can drain the spaghetti, if you prefer. If you do, reserve 1/4 cup of the pasta water to add as needed for a silky sauce.) Remove the pan from the heat, add the basil and toss well. Season with black pepper to taste and serve.

Baked Shrimp in Chipotle Sauce image

Categories     Pepper     Bake     Quick & Easy     Shrimp     Red Wine     Gourmet

Yield Makes 4 servings

Number Of Ingredients 10

1/2 stick (1/4 cup) unsalted butter
1/4 cup dry red wine
1 1/2 tablespoons Worcestershire sauce
1 to 2 canned chipotle chiles in adobo, minced, plus 2 to 3 teaspoons adobo sauce
1 large garlic clove, minced
1 1/2 teaspoons salt
1 1/2 lb medium shrimp in shell (31 to 35 per pound)
Accompaniment: baguette
Special Equipment
a 2- to 3-qt ceramic or glass shallow baking dish

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Melt butter in a saucepan and stir in wine, Worcestershire sauce, chipotles with adobo sauce (to taste), garlic, and salt. Toss shrimp with sauce in baking dish and bake until shrimp are just cooked through, 10 to 12 minutes. Sauce can be briefly simmered (with shrimp removed) to reduce it as needed.

Tips:

  • Choose the right shrimp. For this recipe, medium or large shrimp are best. Avoid using extra-large shrimp, as they can be tough.
  • Cook the shrimp properly. Shrimp cook quickly, so it's important not to overcook them. Cook the shrimp for 2-3 minutes per side, or until they are pink and opaque.
  • Use a flavorful marinade. The marinade for this recipe is made with chipotle peppers, lime juice, garlic, and cumin. This marinade helps to add flavor to the shrimp and makes them extra juicy.
  • Don't overcrowd the pan. When cooking the shrimp, don't overcrowd the pan. This will cause the shrimp to steam instead of sear.
  • Serve immediately. Chipotle shrimp with pasta is best served immediately. The shrimp will start to get tough if you let them sit for too long.

Conclusion:

Chipotle shrimp with pasta is a delicious and easy-to-make meal. This recipe is perfect for a weeknight dinner or a casual gathering. The combination of chipotle peppers, lime juice, garlic, and cumin gives the shrimp a flavorful and slightly spicy kick. The pasta provides a hearty and satisfying base for the shrimp.
