2 chipotles in adobo sauce
1 tablespoon adobo sauce
1/2 lime, juice
Salt and freshly ground black pepper
1 to 1 1/2 pounds ground chuck, 80/20
Salt and freshly ground black pepper
Cheese slices, your choice
Mini burger buns
Chipotle Mayonnaise, recipe above
Pickles
Red onion slices

Steps:

  • For the chipotle mayonnaise:
  • Add all the ingredients to a food processor and puree. Season, to taste, with salt and pepper.
  • For the sliders:
  • Preheat grill over medium-high heat.
  • Form the meat into 2 to 3-ounce portions, packed tightly. Season with salt and pepper.
  • Place the sliders on the grill. Wait until they are nice and crusty on the first side, about 4 to 5 minutes and then flip and cook another 4 minutes. When the sliders are about done, top with desired cheese and close the grill, allowing the cheese to melt.

1 boneless pork shoulder butt roast (3 to 4 pounds)
2 finely chopped chipotle peppers in adobo sauce plus 3 tablespoons sauce
3/4 cup honey barbecue sauce
1/4 cup water
4 garlic cloves, minced
1 tablespoon ground cumin
1 teaspoon salt
1/4 teaspoon pepper
COLESLAW:
2 cups finely chopped red cabbage
1 medium mango, peeled and chopped
1 cup pineapple tidbits, drained
3/4 cup chopped fresh cilantro
1 tablespoon lime juice
1/4 teaspoon salt
1/8 teaspoon pepper
20 Hawaiian sweet rolls, split and toasted

Steps:

  • Place onion in a 5-qt. slow cooker. Cut roast in half; place over onion. In a small bowl, combine chipotle peppers, adobo sauce, barbecue sauce, water, garlic, cumin, salt and pepper; pour over meat. Cook, covered, on low 8-10 hours or until meat is tender., Remove roast; cool slightly. Skim fat from cooking juices. Shred pork with 2 forks. ⅔ cup honey
¼ cup water
¼ cup ketchup
1 tablespoon cider vinegar
2 teaspoons ground chipotle powder, or to taste
½ teaspoon kosher salt
½ teaspoon hot pepper sauce
¾ cup all-purpose flour
2 teaspoons garlic powder, or to taste
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
2 large eggs, beaten
1 ½ cups garlic and herb seasoned dry bread crumbs
1 teaspoon paprika
1 ½ pounds skinless, boneless chicken breasts, cut into strips
½ cup canola oil, or as needed
8 potato rolls, or as needed
½ cup dill pickle slices, or to taste
½ cup shredded lettuce, or to taste

Steps:

  • Combine honey, water, ketchup, vinegar, chili powder, salt, and hot sauce for honey-chipotle sauce in a small saucepan. Bring to a simmer and cook, stirring frequently, 2 to 3 minutes. When reduced to desired consistency, remove from heat.

½ cup Martha White® All-Purpose Flour
1 ½ cups milk

8 slices bacon, cooked and crumbled
¾ cup crumbled Gorgonzola cheese
2 tablespoons butter
1 medium yellow onion, sliced into thin rings

½ cup Italian-style bread crumbs
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon pepper
12 small slices (0.5 oz each) Cheddar cheese
½ cup mayonnaise
1 chipotle pepper in adobo sauce
1 teaspoon adobo sauce from chipotle peppers

Steps:

  • Heat oven to 400 degrees F. Spray 2 cast iron straight-sided muffin pans (6 cups each) with no-stick cooking spray. Stir together cornbread mix, flour, milk, sour cream, and egg in medium bowl until well blended. Stir in chives, bacon, and cheese. Fill prepared muffin pans 3/4 full. Bake 10 to 12 minutes or until golden brown. (Any remaining batter may be made into additional muffins.)
  • Melt butter in a 12-inch Lodge cast iron skillet over medium-low heat. Add onions. Cook until onions are translucent, 8 to 10 minutes. Remove onions and set aside.

2 1/2 to 3 pounds turkey drumsticks
1 medium onion, chopped
2 tablespoons olive oil
Salt
2 garlic cloves, finely chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 cup ketchup
1/3 cup cider vinegar
1 to 3 tablespoons finely chopped chipotle chiles in adobo, including some sauce (see Cooks' Notes)
1 tablespoon Worcestershire sauce
1 tablespoon molasses
1/2 cup water
Freshly ground black pepper
16 slider rolls (or other small, soft buns), split
Brussels Sprout Slaw
Special Equipment
A 3 1/2- to 5-quart wide Dutch oven or other wide heavy pot with tight-fitting lid

Steps:

  • Preheat oven to 325°F.
  • Remove turkey skin.
  • Cook onion in oil with 1/2 teaspoon salt in Dutch oven over medium heat, covered, stirring occasionally, until well softened, about 10 minutes.
  • Add garlic and spices and cook, stirring, 1 minute.
  • Stir in ketchup, vinegar, chiles, Worcestershire sauce, molasses, and 1/2 cup water and simmer mixture, stirring, 1 minute.
  • Add drumsticks and cover pot, then braise in oven, turning drumsticks over once, until meat is very tender, about 2 hours.
  • Transfer drumsticks to a bowl and cool. Discard bones, tendons, and any remaining skin, and pull meat with forks or fingers into coarse shreds.

  • Spoon mixture into slider rolls and top with slaw.
