CHEWY CHOCOLATE CHIP GRANOLA BARS
These granola bars pack well for mid-day snacks or hiking trips. Vary the ingredients for variety or to make them more wholesome. I make two versions--this one if for my sweet-tooth husband--the other for myself, contains 1 c. dried fruit and nuts instead of chocolate chips and marshmallows. Be creative!

Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

CHOCOLATE-APPLESAUCE-FLAX SEED BARS
This is a variation of a recipe from "Desserts for Diabetics" by Mabel Cavaiani. This is very easy to make, and they stay moist for a couple days (they never last longer around here!) DO NOT try using cold applesauce--doesn't work! You can make these non-diabetic friendly by using all sugar. NOTE: The flax seed is whole seed, not ground.

CHERRY CHOCOLATE OAT BARS
A tasty but more heart friendly variant of the oatmeal cookie. The family loves this oatty, nutty, cherry vanilla taste but we love even more that this is much lower in sodium and that the applesauce and flax seed cuts down the fat. They are good day one but keep some around for day two, that's when they are special!

Tips:
- Use ripe apples: This will ensure that your applesauce is sweet and flavorful. You can also use a combination of apples, such as Granny Smith and Honeycrisp, to create a more complex flavor.
- Don't overcook the applesauce: Applesauce should be cooked until the apples are soft and can be easily mashed, but it should not be mushy. Overcooked applesauce will lose its flavor and texture.
- Use good quality chocolate: The chocolate you use will make a big difference in the flavor of your bars. Choose a chocolate that you enjoy eating on its own.
- Don't overmix the batter: Overmixing the batter will result in tough bars. Mix the batter just until the ingredients are combined.
- Bake the bars until they are just set: The bars should be firm to the touch, but they should not be overbaked. Overbaked bars will be dry and crumbly.
Conclusion:
These chocolate applesauce flax seed bars are a delicious and healthy snack or dessert. They are made with whole wheat flour, oats, applesauce, chocolate, and flax seed, so they are packed with nutrients. They are also easy to make and can be stored in the refrigerator or freezer for later. Whether you are looking for a quick snack or a sweet treat, these bars are sure to satisfy your craving.
