1-1/4 cups chocolate wafer crumbs
1/3 cup butter, melted
3 tablespoons plus 1/2 cup sugar, divided
2 packages (8 ounces each) cream cheese, softened
2 tablespoons all-purpose flour
1 can (5 ounces) evaporated milk
1 large egg
2 teaspoons vanilla extract
1 cup semisweet chocolate chips, melted
RASPBERRY SAUCE:
1 package (10 ounces) frozen sweetened raspberries, thawed and undrained
1 teaspoon cornstarch
2 tablespoons cold water

Steps:

  • Line the bottom and sides of a 9-in. square baking pan with heavy-duty foil. In a small bowl, combine the wafer crumbs, butter and 3 tablespoons sugar; press onto the bottom of prepared pan., In a large bowl, beat the cream cheese, flour and remaining sugar until smooth. Beat in milk. Add egg; beat on low speed just until combined. Stir in vanilla., In another bowl, combine 3/4 cup cream cheese mixture and melted chocolate; set aside. Pour remaining cream cheese mixture over crust. Top with spoonfuls of chocolate mixture; cut through batter with a knife to swirl. Bake at 325° for 35-40 minutes or until center is almost set. Cool on a wire rack. Refrigerate until chilled., Meanwhile, for sauce, place raspberries in a blender; cover and process until well blended. Press through a sieve over a small saucepan. Discard seeds. Combine cornstarch and water; stir into raspberry juice. Bring to a boil. Cook and stir for 2 minutes or until thickened. Refrigerate until serving., Using foil, lift cheesecake out of pan; discard foil. Cut into four squares; cut each square diagonally into four triangles. Serve with sauce.

Sometimes you get a bad batch of phyllo that rips and tears easily, so I always buy an extra just in case. I have frozen these before baking. Just add a few minutes to cooking time when you cook them in a frozen state. I have also doubled this recipe for large parties.

3 tablespoons olive oil
1 onion, finely chopped
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 teaspoon salt
1 (4 ounce) package feta cheese, crumbled
½ cup cottage cheese
1 egg, beaten
1 (16 ounce) package phyllo dough
1 cup unsalted butter, melted

Steps:

  • Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Unroll phyllo dough sheets one at a time on a flat surface. Brush with unsalted butter. Cut into strips approximately 5 inches wide. Place 1 tablespoon of the onion, spinach and feta mixture at one end of each dough strip. Fold the end of the strip over the filling so that it forms a triangle. 1/4 cup butter or margarine, melted
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
1/4 cup sour cream
1 teaspoon vanilla
2 eggs
28 paper lollipop sticks or flat wooden sticks with round ends
3 1/2 cups semisweet chocolate chips (from 24-oz bag)
3 tablespoons shortening
2 oz vanilla-flavored candy coating (almond bark), chopped
1/2 teaspoon vegetable oil
Betty Crocker™ green gel food color, if desired

Steps:

  • Heat oven to 300°F. Line 8-inch pan with heavy-duty foil so foil extends over sides of pan. In small bowl, mix wafer crumbs and butter. Press in bottom of foil-lined pan.
  • In large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth. Beat in sour cream, vanilla and eggs. Pour over crust.
  • Bake 30 to 40 minutes or until edges are set (center will be soft but will set when cool). Cool in pan on cooling rack 30 minutes. Cover; freeze 2 hours. Meanwhile, cover 1 large cookie sheet with waxed paper.

1-1/2 cups butter, softened
1-1/2 cups sugar
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
3 ounces unsweetened chocolate, melted and cooled slightly
3 ounces white baking chocolate, melted and cooled slightly
1/4 cup seedless raspberry jam
1 cup semisweet chocolate chips, melted
White baking chocolate shavings

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. Line bottoms of 2 greased matching 13x9-in. baking pans with parchment; grease papers., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, one at a time, beating well after each addition. Add vanilla. Stir in flour. With clean beaters, beat egg whites on medium speed until stiff peaks form. Fold into batter.
