This was given to me by a friend, I was really surprised at how much it really helps when I feel tired. I keep mine in the freezer then pull a couple out when I need a pick-me-up and they are ready for me to eat. You can substitute almond butter for peanut butter, if desired.

Tips:

  • Use fresh cranberries. Fresh cranberries have a tart and juicy flavor that pairs perfectly with the chocolate and nuts in these bars.
  • Chop the cranberries finely. This will help them distribute evenly throughout the bars and prevent them from clumping together.
  • Toast the nuts. Toasting the nuts brings out their flavor and makes them more crunchy.
  • Use a good quality chocolate. The chocolate is the star of these bars, so it's important to use a chocolate that you enjoy the taste of.
  • Don't overmix the batter. Overmixing the batter will make the bars tough.
  • Bake the bars until they are just set. Overbaking the bars will make them dry and crumbly.
  • Let the bars cool completely before cutting them. This will help them hold their shape.

Conclusion:

These chocolate cranberry energy bars are a delicious and healthy snack that are perfect for on-the-go. They are made with fresh cranberries, toasted nuts, and dark chocolate, and are packed with nutrients and antioxidants. These bars are also gluten-free and vegan, making them a great option for people with dietary restrictions.
