4 cups romaine lettuce leaves
2 ounces cucumber, peeled, seeded, and cut into long rounds
4 celery stalks, cut into thirds lengthwise and then crosswise into 2 inch lengths
8 ounces yellow squash, julienned
4 whole carrots, scooped into small balls with the small side of the melon baller
2 tomatoes, chopped
2 ounces diced red onion
Herb Vinaigrette, recipe follows
2 large corn tortillas
Vegetable oil, for frying
Salt and freshly ground black pepper
4 tablespoons white wine vinegar
2 tablespoons peeled fresh garlic
8 tablespoons freshly squeezed lemon juice
4 tablespoons chopped lemon zest
4 tablespoons chopped fresh herbs (parsley, basil, marjoram, thyme)
1/2 teaspoon salt
2 cups extra-virgin olive oil

Freshly ground black pepper

  • Place the lettuce in a large bowl. Add the marinated vegetables and toss with some more of the Herbed Vinaigrette. Season with salt and pepper. Top with the crispy tortilla strips.
  • To make the dressing: in a small food processor, combine all ingredients and blend for 45 seconds to 1 minute until emulsified.

SCOOPABLE GREEN CHOPPED SALAD

Scoopable Green Chopped Salad image

Is it a salad or is it a dip? Inspired by Melissa Ben-Ishay's (@bakedbymelissa) TikTok viral chopped salad, this vibrant crunchy-creamy dish is a salad, but it's meant to be scooped up with chips--not a fork. Don't be surprised that there's tons of dressing: that's intentional (and what makes it so perfectly scoopable).

Time 20m

Yield 4 servings

One 1-pound bunch thin asparagus, woody ends trimmed, thinly sliced (2 1/2 cups)

2 avocados, chopped
1 medium jalapeno, diced
1 1/2 cups loosely packed fresh flat-leaf parsley leaves
1 1/2 cups loosely packed baby spinach

  • For serving: Pour the dressing over the salad and toss with tongs to combine thoroughly; season with salt and pepper. Serve tortilla chips alongside it for scooping.

Tips and Conclusion

Tips:

  • For the best results, use fresh, high-quality ingredients.
  • If you don't have fresh herbs on hand, you can use dried herbs. Just be sure to use half the amount, as dried herbs are more concentrated.
  • If you like your salad spicy, add more chili peppers to the dressing.
  • This salad is a great make-ahead dish. Simply chop the vegetables and make the dressing ahead of time. Then, when you're ready to serve, just toss everything together.
  • This salad is also a great way to use up leftover vegetables.

Conclusion:

This Chopped Green Salad with Herby Chili Dressing is a refreshing, flavorful, and healthy salad that is perfect for any occasion. It is easy to make and can be tailored to your own preferences. So next time you're looking for a healthy and delicious salad, give this recipe a try.
