1 pound ground turkey
8 ounces bulk Mexican chorizo sausage
1 cup diced onion
½ cup diced celery
1 jalapeno pepper, diced
2 teaspoons ground cumin

4 chicken pieces (drumsticks and thighs are good)
1 teaspoon smoked paprika
1 tablespoon olive oil
100 g raw chorizo sausage, cut into bite-sized pieces
1 onion, finely diced
2 cloves garlic, crushed
1 bunch parsley, chopped
300 g chopped tomatoes
400 g butter beans
1 sprig thyme
1 bay leaf
salt and pepper

Steps:

  • Sprinkle the chicken with the smoked paprika, then heat the oil in a heavy casserole and brown the meat all over.
  • Lift out the chicken and add the chorizo to the pan.
  • When the oil starts to come out of the chorizo, add the onion and cook over a low heat for about 5 minutes.
  • Add the garlic and a tablespoon of parsley.
  • Cover and cook gently for another 10 minutes.
  • Add the tomatoes and beans and give it a stir.
  • Add a little water if the mixture is a bit thick.
  • Return the chicken to the pot, along with the thyme and bayleaf.
  • Turn up the heat and bring up to a simmer.
  • Lower the heat to its lowest setting, cover the pot and let it bubble away gently for 30 minutes or so.

1 can black beans, drained, rinsed and drained again
Pinch ground coriander
Pinch ground cumin
6 large tomatillos, diced
2 limes, juiced
1/4 cup chopped fresh cilantro
3 tablespoons finely diced red onion
2 tablespoons extra-virgin olive oil
Honey
Salt and pepper
1 1/2 pounds Yukon Gold potatoes, unpeeled, cut into 3/4-inch cubes
Kosher salt
1 tablespoon canola oil
1/2 pound Mexican chorizo
2 tablespoons butter

1/2 cup grated Monterey Jack
1/4 cup grated cotija cheese, plus more for garnish

Steps:

  • For the black beans: Combine the black beans, 1/2 cup water, coriander and cumin in a small saucepan. Bring to a simmer over medium heat and cook until heated through. Keep warm.
  • For the salsa verde: In a bowl, combine the tomatillos, lime juice, cilantro, red onions, olive oil and honey to taste. Season with salt and pepper. Set aside.
  • For the hash browns: Put the potatoes in a large pot of salted water and bring to a boil over high heat. Cook until very tender, about 10 minutes. Drain and set aside.
  • Heat the canola oil in a large cast-iron skillet over high heat. Add the chorizo and cook until brown and separated into small pieces. Add the butter, then add the potatoes, breaking them up and pressing them down a bit using a potato masher. Stir the potatoes and sprinkle them with salt and pepper. Add the Monterey Jack and cotija. When the Monterey Jack gets melty, stir in the cilantro.
  • To serve: Set a ring mold on a plate and press some of the hash brown mixture into the mold. (If you don't have a ring mold, just spoon some of the hash browns onto a plate.) Unmold and spoon some of the black beans over the hash browns. Top with an egg and some salsa verde. Garnish with cotija, cilantro, green onions and a dusting of ancho powder.

1 ham hock (optional)

8 -10 ounces spanish chorizo, casing removed
2 tablespoons extra virgin olive oil
1 large onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
4 garlic cloves, chopped
1/3 cup vermouth or 1/3 cup white wine
2 (15 ounce) cans pinto beans, rinsed and drained
14 1/2 ounces canned chopped tomatoes (fire roasted is great)
1 cup chicken broth or 1 cup chicken stock
kosher salt & freshly ground black pepper

Steps:

  • Cut the chorizo in half lengthwise and then crosswise into about 1/2-inch pieces. Heat up the olive oil in a big saucepan, over med-high heat. Add the chorizo and cook for approximately 5 minutes or until the pieces are lightly browned . Remove the chorizo and set aside.
  • Remove all but about 2 T of the chorizo flavored oil from the pan. measure the chorizo-flavored oil from the saucepan and put the pan back over medium-low heat. Add the onion and cook for about 4-5 minutes. Add the bell peppers and cook for another 2 minutes. Add the garlic and cook about 1 more minute. Next, add the sherry and simmer for about 2-3 minutes, or until it has reduced by approximately half.
  • Next, add the beans, tomatoes and chicken stock to the saucepan. Simmer this for about 15 mintues. Mash the mixture a bit to crush some of the beans. Lastly, stir in the chorizo and season with salt and pepper , to taste.

2 cups corn oil
4 cups masa harina
2 1/2 cups chicken stock
2 tablespoons ground cumin
2 tablespoons salt
2 links Mexican chorizo
1/4 cup chopped yellow onion
2 cloves garlic, minced
3 cups cooked pinto beans
Salt and freshly ground black pepper
6 limes, juiced
2 jalapenos, minced with the seeds
1 tablespoon fennel seeds
1 cucumber, julienned
1/2 head cabbage, shredded
1 bunch cilantro, chopped
1 red onion, thinly sliced
Salt and freshly ground black pepper
2 chiles de arbol
2 tablespoons olive oil
1/4 cup minced yellow onions
1 clove garlic, minced
3 Roma tomatoes, diced
Salt and freshly ground black pepper
Lime wedges, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Place the oil in a large pot and heat to 350 degrees F.
  • For the sopes: Mix the masa harina, chicken stock, cumin and salt and form a soft dough. To form the sopes, grab a small ball of dough and form mini "soup bowls" about 4 inches in diameter. Repeat until all the dough has been used. Place on a sheet tray and bake in the oven for 5 minutes, just to set the dough. Set aside until ready to fry.
  • For the beans: In the meantime, pull the sausage from the casings and break apart. Heat a skillet over medium-high heat and add the sausage, breaking it up in the pan, and cook until the fat starts rendering, about 5 minutes. Add the onions and garlic to the pan and sweat for 3 to 5 minutes. Add the pinto beans and cook for another 5 minutes. Using a potato masher, mash the beans into the chorizo mixture, making sure to scrape the bottom of the pan. Mix well and cook for another 5 minutes until everything is incorporated. Season with salt and pepper. Hold warm over low heat, making sure the bottom doesn't burn.
  • For the slaw: In a dry skillet, toast the fennel until fragrant and set aside. In a bowl, mix lime juice, jalapenos, cucumber, cabbage, cilantro and onions. Season with salt and pepper and add the toasted fennel. Let stand to bring the flavors together.
  • For the chile sauce: In a dry pan, toast the chiles until fragrant, remove and set aside. Return the pan to medium heat, add the olive oil, onions and garlic. Sweat until translucent, about 5 minutes. Mince the chiles and add them with the tomatoes. Season with salt and pepper and simmer, about10 minutes. Let the mixture cool a bit, then add to a blender and puree until smooth.
  • To assemble: Carefully drop the sopes into the hot oil, 2 at a time, and fry until golden brown, about 3 minutes. Remove and hold on a paper towel-lined sheet tray. Repeat with the remaining sopes.
  • Take a sope and layer with the chorizo and bean mixture, then the slaw and drizzle the tomato chile sauce over the top. Serve with lime wedges as garnish, if desired.
