CHRISTMAS JELLO SALAD
It just would not be any holiday in our house without this jello salad. My mother-in-law was the one who started this tradition many years ago, and now has passed her recipe on to me. This rich jello salad has a beautiful presentation with the cherry and lemon jello. To cut a few of the calories from this salad, I use the 1/3 less fat cream cheese and sugar free jello.

Steps:
- Prepare and bake cake according to package directions for a 2 layer round cake. Place cooled cake layers, top-sides up, in clean 8 or 9-inch round pans; pierce with large fork at 1/2-inch intervals. In separate bowls, add 1 cup boiling water to each flavor dry gelatin mix. Stir 2 minutes or until completely dissolved. Slowly pour 3/4 of the red gelatin mixture over 1 cake round and 3/4 of the lime gelatin over second cake layer. When pouring the Jell-O over the cake layers it will look like the whole cake is saturated with color, but the gelatin mixture will only enter the holes that you made with the fork. Discard the remaining jello or save for another purpose. Frost cake layers with whipped topping or Cool Whip frosting. Add sprinkles. Refrigerate cake at least 1 hour before serving.

CHRISTMAS JELLO CAKE
I used to make this every year at Christmas time when I was a kid. It was a family favourite and when I had children of my own it became my children's go to dessert. Who doesn't like jello?

Steps:
- 1. Prepare jello in seperate bowls according to package directions and let partially set.
- 2. Line a 9X13 pan (preferably glass or plastic - do not use a metal pan or it will discolour the graham crackers) with a layer of the crackers trimming to fit snuggly together into all corners.
- 3. Gently pour one of the flavours of partially set jello onto the bottom layer of crackers. Place a second layer of crackers on top and then add the other flavour. Sprinkle crushed graham crackers on the top and refrigerate until completely set.
Tips:
- Choose the right gelatin: Different types of gelatin have different properties. For a firm, stable jello, use powdered gelatin. For a softer, more delicate jello, use sheet gelatin.
- Use fresh fruit: Fresh fruit will give your jello the best flavor and texture. If you're using frozen fruit, thaw it completely before using.
- Don't overcook the gelatin: Overcooked gelatin will be tough and rubbery. Follow the package directions carefully.
- Chill the jello properly: Jello needs to be chilled for at least 4 hours, or overnight, before serving. If you're short on time, you can chill the jello in the freezer for 1-2 hours.
- Garnish the jello: Before serving, garnish the jello with fresh fruit, whipped cream, or sprinkles. This will make it look more festive and appealing.
