CHUCKWAGON BEEF STEW

Chuckwagon Beef Stew image

Hadn't made this stew in a while, but when I came across the recipe, I remembered that it was delicious and very easy to make.

Provided by Maine-iac

Categories     Stew

Time 3h15m

Yield 6 serving(s)

Number Of Ingredients 19

4 tablespoons flour
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon salt
2 lbs stewing beef
3 tablespoons olive oil
1 large onion, diced
1 green pepper, diced
4 garlic cloves, chopped
1/4 teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon ground cinnamon
1 teaspoon ground cloves (optional)
beef broth
2 cups chopped potatoes
2 cups chopped carrots

Steps:

  • Mix flour, paprika, chili powder, pepper and salt in a bowl or plastic bag, and coat beef well.
  • In large dutch oven, brown beef in oil, add onion, pepper, garlic, pepper flakes, and cook until soft.
  • Add tomatoes, chili powder, cumin, cinnamon, and cloves.
  • Cover and simmer 2 hours, stirring occasionally.
  • If mixture is too thick or if more liquid is needed, add beef broth.
  • Add potatoes and carrots and cook until veggies are done, about 45 minutes.

Tips:

  • Mise en place: Always prepare your ingredients and have them ready before you start cooking. This will make the process smoother and faster.
  • Use good quality ingredients: The better the ingredients, the better the chowder will taste. So, use fresh, high-quality vegetables, meats, and seafood.
  • Don't overcook the vegetables: You want the vegetables to be tender but still have a bit of a bite to them. Overcooked vegetables will make the chowder mushy.
  • Season the chowder well: Don't be afraid to add salt, pepper, and other seasonings to taste. A well-seasoned chowder will have a lot more flavor.
  • Let the chowder simmer for a while: Simmering allows the flavors to meld together and develop. The longer you simmer the chowder, the better it will taste.
  • Serve the chowder hot: Chowder is best served hot and fresh. So, make sure to reheat it thoroughly before serving.

Conclusion:

Chuck wagon chowder is a hearty, flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So, next time you are looking for a delicious and satisfying meal, give chuck wagon chowder a try. You won't be disappointed!
