1/4 cup mayonnaise
2 tablespoons grated onion
2 tablespoons chutney
3 teaspoons curry powder
1 large garlic clove, minced
1/8 teaspoon pepper
1 can (9-3/4 ounces) chunk white chicken, drained
1/4 cup slivered almonds, optional
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese until light and fluffy. Stir in the mayonnaise, onion, chutney, curry, garlic and pepper until blended. Fold in the chicken. 1 1/2 lbs skinless boneless, chicken thighs
3/8 teaspoon ground red pepper
1/2 teaspoon ground black pepper
1/8 teaspoon salt
3 apricots, halved and pitted
1 tablespoon water
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
2 garlic cloves, chopped
8 mini sandwich buns

Steps:

  • Combine first 3 ingredients in a small bowl.
  • Sprinkle chicken with pepper mixture.
  • Place a large grill pan over medium high heat, and coat with cooking spray.
  • Add chicken to pan, cook 5 minutes on each side or until done.
