CIDER-ROASTED CHICKEN
I'VE never shared this recipe before, even with members of my own family. I use it only for special occasions such as Christmas. I found the recipe in the first real good cookbook I owned, and my six children love it. I've also been inspired to enter cooking contests and have won several times. -Mary Dunphy, Stephenville, Newfoundland

Tips:
- Use a whole chicken for the best flavor. A whole chicken will give you more meat and a richer flavor than just chicken breasts or thighs.
- Dry the chicken thoroughly before roasting. This will help the skin crisp up.
- Season the chicken generously with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Roast the chicken on a rack. This will allow the air to circulate around the chicken and help it cook evenly.
- Use a meat thermometer to ensure that the chicken is cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit.
- Let the chicken rest for 10-15 minutes before carving. This will help the juices redistribute throughout the meat.
- Serve the chicken with your favorite sides, such as roasted vegetables, mashed potatoes, or stuffing.
Conclusion:
Cider-roasted chicken is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is tender and juicy, with a crispy skin and a flavorful cider glaze. This dish is sure to be a hit with your family and friends.
