AVOCADO, TOMATO & FETA CHEESE APPETIZER

Avocado, Tomato & Feta Cheese Appetizer image

This came in the mail from a Ralphs Grocery Store flyer. My whole family loved it. I didn't have cumin, so I used coriander and it was great. I served this with "Sesame Thin" crackers from Trader Joes and "Just Chips" from Just Off Melrose.

Time 20m

Yield 2 cups, 20 serving(s)

Number Of Ingredients 9

2 avocados, chopped
4 roma tomatoes, chopped
1 small red onion, chopped
1 bunch cilantro, trimmed and chopped
4 ounces feta cheese, crumbled
1/4 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon ground cumin
1 teaspoon kosher salt

Steps:

  • Combine the avocados, tomatoes and onion in a bowl. Mix gently. Stir in cilantro. Add feta cheese, olive oil, vinegar, cumin and salt and mix until combined. Chill covered in the refrigerator. Serve with warm pita wedges, tortilla chips or crostini. Refrigerate leftovers.

Tips:

  • Choose ripe avocados: For the creamiest, most flavorful salad, use ripe avocados that yield to gentle pressure when squeezed. Avoid avocados that are too hard or too soft.
  • Use fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to the salad. If you don't have fresh cilantro, you can substitute another fresh herb, such as basil or parsley.
  • Use a variety of tomatoes: For a more complex flavor, use a variety of tomatoes, such as cherry tomatoes, grape tomatoes, or Roma tomatoes.
  • Don't overdress the salad: A light vinaigrette dressing is all you need to enhance the flavors of the salad. Too much dressing will weigh it down.
  • Serve immediately: This salad is best served immediately after it is made. The avocados will start to brown if they sit for too long.

Conclusion:

With its vibrant colors, fresh flavors, and creamy texture, this cilantro avocado tomato and feta salad is a refreshing and delicious summer dish. It's perfect for a light lunch or dinner, or as a side dish for grilled chicken or fish. The salad is also a great way to use up ripe avocados and tomatoes. So next time you're looking for a healthy and flavorful salad, give this recipe a try.
