1/2 cup gin
2 cups port
6 sprigs fresh thyme
6 juniper berries
4 venison steaks, 6 ounces each
Salt and freshly ground pepper
3 tablespoons olive oil
2 tablespoons unsalted butter
1 onion, peeled and finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 cup port wine
1/4 teaspoon Mexican cinnamon
1/4 teaspoon allspice
1/2 cup cranberry juice
2 cups chicken stock
2 tablespoons cold unsalted butter
1/4 cup fresh or frozen cranberries, coarsely chopped
Salt and freshly ground pepper
4 large sweet potatoes, peeled, cut into large cubes and cooked until soft
1 stick unsalted butter
1 teaspoon chipotle puree
2 tablespoons maple syrup
Salt and freshly ground pepper

Steps:

  • Combine gin, port, thyme and juniper berries in a medium shallow baking dish. Add the venison and turn to coat. Cover and marinate in refrigerator for 30 minutes. Heat oil in a large saute pan over high heat until almost smoking. Remove the venison from the marinade and shake off excess. Season with salt and pepper to taste. Cook on one side until golden brown. Turn over, reduce heat to medium and continue cooking until medium-rare, 3-4 minutes.
  • Heat butter in a medium saucepan over medium-high heat. Add the onions, celery and carrots and cook until soft. Raise the heat to high and add the port, cook until dry. SPICY CHIPOTLE-CINNAMON ROASTED SWEET POTATOES

Looking for something a little different this Thanksgiving? Here's a nice way to liven up your menu or to ensure that you aren't the fifth person to bring candied yams to that family dinner.

Provided by Closet Foodie

Categories     Low Protein

Time 35m

Yield 6 serving(s)

Number Of Ingredients 5

3 large sweet potatoes or 3 large yams
2 tablespoons extra virgin olive oil
1 teaspoon ground cinnamon
1/2 teaspoon ground chipotle chile pepper (more or less to taste- but be warned, ground chipotle is hot)
salt

Steps:

  • Preheat your oven to 450 degrees.
  • Wash and scrub the sweet potatoes.
  • Cut each sweet potato into bite-sized chunks (make each piece roughly about an inch).
  • Add the sweet potato pieces, the extra virgin olive oil, cinnamon, and chipotle to a gallon-sized storage bag.
  • Close the storage bag and shake, making sure all of the spices are evenly distributed on the pieces (otherwise you might find out what happens when too much chipotle sticks to an individual piece).
  • Spread out the spiced sweet potato pieces in an even layer onto a baking sheet.
  • Salt to taste.
  • Bake the sweet potatoes in the oven for 15 minutes, then using a spatula to turn them, place them back in the oven for another 15-20 minutes. If you like them crisper, you can add a few minutes, just make sure to check on them so they don't burn. Serve them as they are, or you can dip them in ketchup like french fries.

Tips:

  • Choose the right potatoes: Small, waxy potatoes like Yukon Gold or baby potatoes work best for this recipe. Larger potatoes will take longer to cook and may not get as crispy.
  • Toss the potatoes in oil and spices: This will help the potatoes get crispy and flavorful. You can use any spices you like, but a good starting point is salt, pepper, garlic powder, and paprika.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and tender on the inside. Aim for a temperature of 425 degrees Fahrenheit (220 degrees Celsius).
  • Stir the potatoes occasionally: This will help them cook evenly.
  • Roast the potatoes until they are tender and crispy: This should take about 20-30 minutes.
  • Serve the potatoes immediately: They are best when served hot.

Conclusion:

Cinnamon roasted potatoes are a delicious and easy side dish that can be served with any meal. They are crispy, flavorful, and sure to please everyone at the table. So next time you're looking for a simple and tasty side dish, give cinnamon roasted potatoes a try!
