CINNAMON ROLL COFFEE CAKE
The flavor of a cinnamon roll and the ease of a coffee cake! A friend emailed me this recipe, which she got from a message board. This is quick to put together, super moist and simply delicious. It is different than many coffee cakes out there and I hope you enjoy it as much as we do! The original baking time I was given was 50-60 minutes. Mine was done in 40 minutes, so I changed the baking time on it. If yours takes longer than what I have stated, I guess it was just my oven. :)

Steps:
- Preheat oven to 350º F and lightly grease a pie plate or springform pan with butter or non-stick spray. Remove cinnamon rolls from packaging and place them in greased pie plate. Use your fingers or the bottom of a measuring cup to flatten rolls into an even layer, forming a crust that goes partially up the sides of pie plate. In a medium bowl, whisk together flour, baking soda, baking powder and salt. Set aside. In a large bowl or mixer, cream together butter and sugar for 3-4 minutes, or until fluffy and lightened in color. Beat in egg and vanilla extract. Beginning and ending with the dry ingredients, alternate between adding the flour mixture and sour cream, mixing until everything is just incorporated. In a separate bowl, whisk together topping ingredients (cinnamon, sugar and brown sugar). Pour cake batter on top of cinnamon roll-lined pie pan and smooth into an even layer. Sprinkle cinnamon brown sugar topping over cake batter, then place in oven and bake for 32-34 minutes, or until toothpick inserted in center comes out clean. Warm icing that came with cinnamon rolls and drizzle over cake. Enjoy!
Tips:
- Use Fresh Ingredients: For the best flavor, use fresh ingredients whenever possible. This includes fresh milk, eggs, butter, and spices. If you can, try to find organic or locally-sourced ingredients.
- Let the Dough Rise Properly: The dough for cinnamon roll coffee cake needs to rise twice. The first rise is to allow the yeast to activate and the dough to start growing. The second rise is to allow the dough to rise to its full potential and become light and fluffy. Be sure to let the dough rise in a warm place, free from drafts.
- Roll the Dough Thin: When rolling out the dough, try to roll it out as thin as possible. This will help to ensure that the cinnamon roll coffee cake is not too dense or doughy.
- Use Plenty of Cinnamon Sugar: Don't be shy with the cinnamon sugar. A generous amount of cinnamon sugar will give your cinnamon roll coffee cake plenty of flavor.
- Bake the Coffee Cake Until Golden Brown: The cinnamon roll coffee cake is done baking when it is golden brown on top and a toothpick inserted into the center comes out clean.
Conclusion:
Cinnamon roll coffee cake is a delicious and easy-to-make breakfast or brunch treat. With its tender crumb, sweet cinnamon filling, and cream cheese frosting, it's sure to be a hit with everyone who tries it.
