I first got these as a "teacher gift" for Christmas almost 30 years ago. Then I just had to track down the mom and beg for the recipe! These make an EXCELLENT food gift for all the people you appreciate and/or love. I usually double the recipe (after buying a large bag of walnuts on sale or at a warehouse store.) I've packaged...

Time 45m

Number Of Ingredients 4

1/2 c white sugar
2 Tbsp ground cinnamon
4 c walnut halves
1 egg white

Steps:

  • 1. Preheat oven to 300 degrees F. (PLEASE note the temperature is THREE HUNDRED degrees! These nuts will burn at a higher temperature. Don't ask how I know this...)
  • 2. Spray a cookie sheet (with sides, unless you're really coordinated) with cooking spray.
  • 3. Stir together the sugar and cinnamon in a small bowl and set aside.
  • 4. Put the nuts in a large bowl and pour in the egg white. Mix together well. (OK, I admit I mix this recipe up with my hands.)
  • 5. Pour the sugar & cinnamon mixture over the nuts and mix well.
  • 6. Spread in a single layer on the prepared cookie sheet.
  • 7. Bake for about 30 minutes (I check after 25 minutes) until the nuts are toasted and dry. Serve warm or cool completely.
  • 8. Store in an air-tight container.

Tips:

  • Choose fresh walnuts: For the best flavour and texture, use fresh walnuts. Look for walnuts that are plump and free of blemishes.
  • Toast the walnuts: Toasting the walnuts before candying them enhances their flavor and makes them more crunchy. You can toast the walnuts in the oven or in a pan over medium heat.
  • Use a candy thermometer: A candy thermometer is essential for making candied walnuts. It helps you to monitor the temperature of the sugar syrup and ensure that it reaches the correct stage.
  • Don't overcrowd the pan: When candying the walnuts, don't overcrowd the pan. This will prevent the walnuts from cooking evenly.
  • Let the walnuts cool completely: After candying the walnuts, let them cool completely before storing them. This will help to prevent them from sticking together.

Conclusion:

Candied walnuts are a delicious and versatile snack that can be enjoyed on their own or used in a variety of recipes. They are perfect for adding a touch of sweetness and crunch to salads, yogurt, granola, and oatmeal. Candied walnuts can also be used as a topping for cakes, pies, and ice cream. With just a few simple ingredients and a little bit of time, you can make your own candied walnuts at home. So next time you're looking for a sweet and satisfying snack, reach for a handful of candied walnuts.
